The smell of charcoal and grilling meat wafts through the air of Marrakech's huge open market place, Jemaa el-Fna, and with one wiff you are assured of two things, Moroccans are the masters of grilling over a charcoal fire, and they know their spices, and most importantly, how to use them! The combined skills of Arab and Berber have resulted in some of the most flavorful grilled food on the planet - meat, poultry, and fish, you name it. They begin with the best of ingredients, and of course their bags of spices.
