Product Description

Miso is a traditional Japanese seasoning produced by fermenting rice, barley and/or soybeans, with salt and the fungus k?jikin, the most typical miso being made with soy. The result is a thick paste used for sauces and spreads, pickling vegetables or meats, and mixing with dashi soup stock to serve as miso soup. High in protein and rich in vitamins and minerals, miso is still very widely used in Japan, both in traditional and modern cooking, and has been gaining world-wide interest. Miso is typically salty, but its flavor and aroma depend on various factors in the ingredients and fermentation process. White miso has a slightly milder, sweeter flavor than red miso.

this product must be refrigerated thus has to be overnighted which makes the shipping 3x the price of the product. however it will last in your refrigerator for a year.

This miso paste is very tasty, although shipping is quite expensive. I put about 3 tablespoons of the miso paste into 4 cups of dashi stock and add scallions, tofu, and wakame. It's super easy and takes less than 10 minutes to make restaurant quality miso soup.

Multiply the cost of white miso paste by 5 before deciding to order, because shipping is outrageously expensive. Packaging on the website is misleading, as you will not receive it in a resealable container. Taste is good, but find a very clean, airtight container to store it in your fridge.

This stuff is strong, less than a teaspoon of paste per 10 oz dashi stock will do you fine. Makes perfect clouds in the broth, and has a good smooth mouthfeel.
