Basic Preparation for our DeWied Natural Hog Casings 1. Rinse casings in fresh water. 2. Put casings into a container of lukewarm water for 30 minutes. 3. Run water through the casing as you are putting them on the stuffing horn. *All natural casings can be resalted even if they have been soaked. Just take regular table salt, wet it and apply generously on the unused casing. Pack casing in a air tight container and refrigerate. DO NOT FREEZE! Freezing a natural casing will weaken it and it will be no good after it has thawed.

Product Description

Stuffs roughly 100-125 lbs. 32 - 35 mm (1¼ - 1½ inch) in Diameter. Processor PackTM brand casings are made to the highest quality standards at DeWied. Natural Hog Casings Are Best used for Fresh Sausage (such as Bratwurst, Pork Sausage Links, Kielbasa etc.) BUT - Natural Hog Casings CAN be smoked. 1 lb. of meat uses approximately 2 feet of natural hog casings. Whisker free, pre-flushed and vacuum bagged. 32mm-35mm. 1st quality natural sausage casings. Stuffing capacities vary according to the number of links per pound and how tight the casing is stuffed. Although our natural hog casings are held to firm specifications, there may be a slight variance in stuffing diameter, hence 32mm - 35mm. This may also have an impact on stuffing capacity. Normal stuffing capacity for a hank of hog casings is 100 to 120 pounds or more. Use for fresh or smoked sausage. Bratwurst, Polish sausage, and Italian sausage. 32-35mm pork casings can also used to stuff pepperoni. Store casings in the original bag in the refrigerator until time for use. Hog casings stored in the original bag have been shown to keep up to four years in the refrigerator. Some odor is normal with natural casings especially in warm weather and this should disappear with a rinse in fresh water. Casings should be soaked in luke warm water for 30minutes before use. This helps to open the pores of the casing and makes them easier to handle. DO NOT USE HOT WATER as this may actually cook the casing rendering them useless. Casings stored in this manner have been shown to keep for up to 5 years. DO NOT FREEZE

The thing with good casings is that you do not want to notice that you are eating a casing, preferring it to just be a part of the meat that is inside of it.

Making sausage like we do is niche. It's more about having friends over and drinking beer. We usually make about 200-300 sausages. The product I bought this year was great. it was the first time I bought casings off the net, and I have nothing but positive things to say. I bought the more expensive pack of casings. Which was good, we had some noobs working the horn and tears were happening left and right. So we did have enough plus leftover. Thanks for the product, I will be using you in the future. I am somewhat skeptical ordering fresh meat and/or meat products online. I would rather buy locally, if available. But I saw this on Amazon. The price was perfect. So I decided to try.

This stuff was double bag sealed and double insulated, came way before expected, had a personally hand written note from the owner thanking me for my purchase and a guarantee that is just plain unreal. You can't beat this meat! as for the casings they was on a ring to help keep things organized and worked out pretty darn good. Bought these for our Christmas Kielbasa Cranking Party and have been impressed with the quality. The thing with good casings is that you do not want to notice that you are eating a casing, preferring it to just be a part of the meat that is inside of it. These do the trick. I've ordered others online that have been "tough" or "chewy" when eating, and that is definitely not a good thing. We cranked out about 100 pounds, and had no problems except for the occasional rupture when one of the catchers doesn't pay attention. All in all a very good product.

I have used several brands of casings, and I am most impressed with these.

First, they were easy to detangle. Most companies use a plastic loop to help keep them bunched together, but these weren't as tangled as other brands.

Secondly, the casings are VERY LONG. This helps with tangling, but as I have a smaller stuffer, my stuffer tubes aren't 14" long. I did have to cut them in half to use them easily. This isn't a knock at all to the product, but a plus, in my opinion.

Finally, I was really impressed with the quality. My first run, I stuffed 15# and only had two tears when trying to link - due to my own over-stuffing negligence. The product was clean and easy to use.

I offset grilled some sausages, hot smoked some and cold smoked others. They held up very well under all these conditions. I will be buying these again.

Recently bought a small meat grinder with the intent to make my own sausage. I bought these casings based on other customer reviews. Although I have not tried others, so can't compare, these are great and worked fine even on my first attempt. Now I can make my own beef 'boerewors', and I am looking forward to many years of pleasure making my own sausage. There are a lot of casings in this package, and I understand it will last in the fridge for at least a year. It is soaked in a heavy salt solution, and you have to rinse the casing before use but I have not noticed any kind of after taste. Making your own sausage is hard work and time consuming, so I doubt that I will do it more than a few times a year. I am glad I bought these, so that I am not put off from making a difficult task even harder.

I've used these casings several times. These are some of the best ones out there. I make around 1500 lbs a year and the only thing I found wrong is sometime human error, buy some of the new comers showing up to help and not paying attention while stuffing on the electric grinder, buy sometime over stuffing the casing. This will make the casings bust and hard to loop. Other than that I will give it a 10, but can only give it a 5 .............star.
