Navitas Naturals palm sugar is a new, wonderful, and healthy sweetener alternative. Coconut palm trees are the natural source of this sugar. Traditional sugar farmers collect the nectar of the blossoms from these sustainably grown trees, and carefully craft a caramel-like crystal sugar. Perfect as a 1:1 cane sugar replacement, Navitas Naturals palm sugar is easily incorporated into everything culinary, from favorite dessert recipes to homemade lemonade. Safe for diabetics and those looking for weight control, palm sugar is a naturally low glycemic index food (GI35), boasting almost half the GI of cane sugar. With vitamins and minerals such as potassium, magnesium, zinc, and iron, palm sugar really is the sweetest way to a healthy lifestyle. This palm sugar is 100% organic, vegan, kosher, gluten-free, and sustainably-grown. This is sold in a pack of two 16-ounce pouches.

Was concerned about sugar, afraid of saccharine, stevia could get bitter and had its own set of warnings.
Raw honey was certainly more natural, but still high glycemic.
I was so relieved when I discovered organic Agave Nectar.
Very low glycemic, and sweeter than sugar or honey, so used less.
How deceived I felt when I started reading about *why* it was low glycemic.
It is really just light high fructose corn syrup! (HFCS also is low glysemic).
The problem with AN and HFCS is it rushes right to your liver and gets processed there! Intakes "may indirectly harm the liver by increasing the risk of obesity, diabetes, and elevated blood levels of triglyceride fat, all of which in turn increase the risk of liver disease." [...]
So the search was on to once again find something that could sweeten up my tea and not harm me!
This Palm Sugar is perfect! One tsp has only 10 calories and 2.5 gm carbs, yet has a glycemic index of only 35- about the same as the now-dreaded AN, and much lower than regular sugar or honey. Also, palm sugar has a good amount of nutrients and minerals in it. While I certainly do not consider it a health food I am pleased to know that instead of impacting harm it could be doing a little good!
Be careful of what brand you buy.
I heard that some american companies are mixing it with cane sugar; other brands have more calories than this organic one from Navitas.
The taste? Perfect! Has a slight light-brown sugar flavor. Definitely does not over-power but rather enhances the drink.
I have not cooked with it mainly because I have not yet cooked any sweets since this arrived. Would I? Hard to say. I would love to, but I think of it as special, and not sure if I would want to waste it by having it lost in a cookie. But then that subtle flavor...I'm thinking it would be awesome in biscotti!
There is a danger that you will want to make too many goodies though!
Browsing through the recommendations, I found this product and read the reviews. I learned that it is the most natural (also organic) coconut palm sugar off all those I researched. Since my purpose in using this sugar is health related, the degree of processing is important to me.
Nutritional value is also a bonus, when choosing an alternative to lackluster commercial white heavily processed sugar. I was happy to learn that coconut sugar is a good source of B vitamins, and minerals. I prefer getting my supplements (necessary vitamins and minerals) in my foods, rather than in bottles and capsules, so this is a plus.
Not only is the product organically grown by real farmers, but the trees are sustainably grown, so I know I'm benefitting both myself and my dinner guests, and the environment as well.
I bought the 2-pack so I would always have some coconut sugar on hand. It is equivalent by measure to standard white sugar so it's easy to substitute in baking. My cookies and banana bread never tasted better.
I will continue to use and buy this all natural, organic sugar with B vitamins and enzymes in it.
Oh, I actually found the Madhava brand of coconut sugar available at a Walmart store for a little over $4 a bag.
