Range Top: 1. In medium saucepan, bring 1-3/4 cups water and 1 tablespoon butter or olive oil just to a boil. 2. Stir in rice and contents of Spice Sack. Return to a boil. 3. Cover. reduce heat to low. Simmer 20 to 25 minutes or until most of water is absorbed. 4. Fluff pilaf lightly with fork before serving. Makes 3 cups. Microwave: 1. In round 2-quart microwaveable glass casserole, combine rice, contents of spice sack, 2-1/4 cups water and 1 tablespoon butter or olive oil. 2. Cover microwave at High 18 to 21 minutes or until most of water is absorbed (Microwave ovens may vary. Adjust times as needed). 4. Fluff pilaf lightly with fork before serving. High Altitude Preparation: At high altitudes, increase water to 2-3/4 cups and cook time to 33 to 38 minutes.

I like the Toasted Almond mix so much that I often add nuts myself to the other flavors; the crunch adds interest.

Still, even at Amazon's excellent low price (with super saver shipping) this flavor of rice runs nearly 68% more per ounce than the basmati, wild rice and vegetable medley we've favored of late, to which we add our own spices.
I strongly recommend this Near East product. It's delicious and nutritious and cooks in a hurry. However, after we have consumed the last box now in our cabinet, we won't be getting this item again. It just costs too much.
This pilaf has a subtle flavor that goes beautifully with pretty much anything - steak, chicken, pork chops, seafood. It's also really good on our meatless nights. I would suggest using real butter rather than margarine because it adds a depth of flavor that's very noticeable.
It's easy to "dress up" by adding peas or diced carrots or asparagus or bits of left over steak, chicken or pork or toasted almonds. It's also delicious with a bit of red wine/butter sauce poured over.
Each box has about 3 servings but I always make extra because everyone in my family loves this stuff. We've tried the other flavors of rice pilaf from Near East but we don't like them nearly as much and always come back to the original flavor. And now that I have it on Amazon Subscribe and Save, I never even have to go looking for it anymore!
If you're looking for an alternative to mashed or baked potatoes, try this for a change. Y'all may love it as much as we do.
