I bought this because my wife & I wanted to add frothed milk to our coffee, but we didn't want to buy or use a full-on espresso machine and its steam wand. We use it in conjuction with our Cuisinox Roma 6-cup Stainless Steel Stovetop Espresso Maker.

I was skeptical at first. I'd never seen nor heard of a device like this. After unpacking and cleaning, it was ready to go. Very simple usage, very simple instructions. It's so easy to make frothed milk now!

It uses a silent, magnetically driven spinner to mix the milk inside of a container that simultaneously warms up the milk. It uses a whisk-type spinner for frothing or a smoother spinner for simply stirring the milk. It does not heat/cook the milk like a steam wand, it simply warms it up. The whisk-type stirrer gives the milk foam. The combination of heat and whisking provides for a very good milk froth that's firm and won't break down in minutes.

Here's a quick breakdown:

Pros:
* Warm, frothy milk is attained in about 1 minute.
* It is very consistent.
* It makes enough froth for one or two servings, depending on your preferences.
* It is very easily cleaned.
* It is very quiet, almost silent. You can now froth while your partner sleeps!
* It can be used to make warm or cool milk & coffee drinks.
* One stirring device for froth, one for latté.

Cons:
* It does not heat the milk to the same temperature as a steam wand.
* It does not caramelize the milk sugars as efficiently as a steam wand.
* It cannot froth heavy cream. The magnetic spinner does not have that much torque.
* It cannot caramelize skim milk.

Guidelines:
* Use whole milk for best results.
* Use half & half when more cream is needed.
* Rice milk, soy milk and skim milk won't work well.

Regardless of how much you spend on your espresso machine, this little wonder from Nespresso blows away old-fashioned steam or expensive machines with automatic milk canisters. You simply pour the milk in, turn it on and in two minutes or less have an amazing amount of perfect froth and hot milk, plenty for at least two decent cups. It will also froth cold milk for other coffee beverages. Film director and gadget guru Barry Sonnefeld turned me on to this in a 2010 column in Esquire magazine - he's a coffee fiend on the set - and the machine doesn't disappoint. Not only does the milk froth perfectly, but without all that added air/steam/water, the froth will last right down to the bottom of the cup. Simply amazing and worth every penny. I use it with our expensive Saeco super automatic express machine, and haven't turned on the steam since we bought the Aeroccino.

Let's get it out of the way right off the bat: this is a splurge. Noone "needs" an automated milk frother.

A manual frother consisting of nothing more than a glass beaker and a plunger with a fine mesh screen on the end will do just as good a job -- if not better -- for a fraction of the price.

But the Nespresso Aeroccino3 is so minimalistically attractive and seductively simple that it is hard to resist, nonetheless.

It feels solid, is attractive, and comes with two frothing tips, which -- in an elegant design solution that seems almost Apple-like -- are held in place magnetically.

The provided manual is a little skimpy on details, but operation is simple and straightforward. Hold the single button on the container for two seconds and the light turns blue for cold frothing; press it once quickly and the light turns red for warming and frothing.

Despite the simplicity of the device, I've been surprised to see lots of people on other forums complaining of problems using it. Most seem to stem from simply not reading the manual and understanding the fill lines. The two fill lines inside the container are not a MIN fill line and a MAX fill line, as some assume: they represent the MAX fill line for each tip. If you fill to the higher line (the one for the steam tip) but erroneously using the frothing tip with it, instead, you will make a mess: this isn't a problem with the unit, but user error. Any resulting overflow is completely predictable. If you want to rant and rave, address your complaints to the Laws of Physics, not Nespresso.

Also, from what I've gathered, it is important to fill right up to the appropriate line for each tip every time. Say, for instance, you only need a little milk and foam: you might be tempted to fill only halfway up to the line, right? Not a good idea. The machine is designed to perform best with a full portion of milk, so pour right up to the appropriate fill line. Once you understand this, the Aero3 will make consistent frothed milk in about a minute, every time.

The foam produced by the Aero3 using regular skim milk is light and fluffy, if a little ephemeral. Results with organic 1% milk have been more satisfying and longer lasting.

The manual notes that the Aero3 works best with whole milk, which seems counterintuitive, given that it is heavier due to its greater fat content. Your mileage may vary, so some experimentation will be in order based on your milk preferences.

All told, the Aero3 gets high marks for ease of use, design, and operation.

Only its ridiculous price tag -- an egregious symptom of the ongoing fetishization of coffee culture -- prevents me from giving it 5 stars. There is no way this machine should cost more than $30 - 40.
