STIR-FRIED CUCUMBERS

3 medium-sized cucumbers

3 tablespoons salad oil

1/4 cup water

5 teaspoons soy sauce

1/4 teaspoon sugar

1. Peel and cut each cucumber in half length-wise; remove seeds. Then cut cucumber halves into 1-inch chunks.

2. In 4-quart saucepan over high heat, in very hot salad oil, cook cucumbers, stirring quickly and constantly, until evenly coated with oil. Add water, soy sauce, and sugar. Reduce heat to medium; cover and cook about 5 minutes, stirring occasionally, until tender-crisp.

120 calories per serving.

A good source of iron. Low in cholesterol.

Time: about 15 minutes before serving

Yield: 4 servings

I love this cookbook. It's huge! I has tons of wonderful and delicious recipes. It's also a very attractive book and would make a wonderful gift. I use this cookbook regularly.

This book is so great there are abundance of economical meals that involve chicken with wine, chicken marsala, chicken orobianco, etc. I love how this book is partitioned in categories instead of random, the book is greatly detailed, my only gripe is there is not enough drawings and pictures to accompany the cookbook. I love the semisweet chocolate cake recipe, another gripe is that when there is a recipe for a frosting accompanied with a cake, they dont put the recipe on the same page, you have to skim to another page, but the navigation is easy. I give this book because of quantity and quality 5 stars.

This was purchased to replace a copy owned by my daughter--the previous copy was lost during a flood last year. She was thrilled that she was able to obtain another copy--many of her favorite and best recipes were in that book and she had been very unhappy at the loss of the one she had owned so long. A terrific cookbook!
