I bought this item in whole foods store. The label says Newman's Own Organic Balsamic Vinegar of Modena. Wanted to give this a try. My overall experience was OK if your'e drunk. But it could be way better.
-This thing is made from wine vinegar and cooked grape must that's mixed together -Its NOT aged so it lacks that distinct earthy, woody aroma that you associate with a good balsamic vinegar -It has 5 grams of sugar per tablespoon or 20 calories but you can barely taste the sweetness -It tastes more like a red wine vinegar or even rice vinegar - light, fruity and fresh and has an acidic after taste similar to eating a lemon. In good quality aged balsamic vinegars you wont notice this high acidic aftertaste and it will be more sweet and mellow to the palate. Not this one. Overall this may be an OK vinegar for salad dressings but not so great for using it as a dip with olive oil. But its cheap and definitely not a total rip off.
