The flavor is not bad, it's just that it's so salty. I wish there were a way to leave out some of the seasoning. Lots of dehydrated veggies in there - carrots, peas, corn, beans, green beans, and some lentils.My recommendation is to let it sit for more like 10 minutes after you put in the boiling water. Otherwise, the beans will still be hard. Give it a good stir in the middle though. Also, more time gives the couscous a chance to absorb more water so the cup will be more couscous and less watery.

Of all the Nile soups I use, this is my favorite. Wonderful flavor--but I let it sit about 8 minutes to rehydrate the corn and green beans better. My brother in law recommended it to me, and it just nudged out black bean as a favorite.

I bought this because I read on this site that the dietary fiber was 12 grams, however it is only 2 grams so the site isn't correct. The calories are wrong as well. Good product otherwise. I have repeat purchased several of these "soups" mostly for the protein, low fat and high fiber. The sodium is higher than I'd like, however relative to other soups, it is very reasonable.

Couscous Minestrone? Really? I passed on this one a few times before finally giving it a try, but I'm glad I did as it is pretty tasty, very filling, and as good as you would expect from Nile Spice. I like a lot of their soups and this one joins the list. It has a slightly spicy kick, no really strong flavors, but overall is tasty enough. Not my favorite, but pretty good. I like the 180 cals and almost no fat. A bit high in sodium (590 mg., 25% of daily recommended intake) as is true of many of these soups.I love Nile Spice soups because they taste good and are so quick and easy to prepare. Just add boiling water, stir and let sit for 5-10 minutes. I prefer the boiling water method to the "add water and heat in microwave" method as there are no "boil overs" and mess in the microwave this way, and they taste as good or better to me. I wouldn't call it minestrone, exactly, but I would call it good.

I take this soup on work trips. As a vegetarian, I know I'll have something to eat. Tip: Get a box of cheap sandwich ziplog bags. Pour the soup into a bag and use a plastic bowl. It'll store in a much more compact space that way.

After adding the boiling water I find that allowing the soup to steep for 10 min instead of 5 provides - for me - a better texture. All of the Nile Spice offerings are a significant improvement over the Nutrisystem lunches - even without spice adjustments. And the cost savings.

I became acquainted with the Nile Spice line of soups through my local market's organic section but now buy them on line at Amazon by the dozen. it is an easy to prepare soup that tastes delicious and is healthy to boot. I will continue to get them at Amazon and I will continue to enjoy them for lunch. Once your water is boiling it takes just five minutes to prepare.

I do like the taste of this soup and enjoy the somewhat spicy "kick." And the price is not bad. But the contents of the soup do not fully "cook" when prepared as instructed. Even after letting the soup sit tightly covered for 10 minutes, I still find that the vegetable pieces are somewhat hard. I am going to try emptying the soup container contents into a bowl after the "cook" period and microwave it and see if this corrects the issue. But this will make preparation more complicated at work (I bought this product to keep at work).
