I accidentally ordered this, Minestrone Soup, instead of Nile Spice's Minestrone Couscous. Two very different products indeed!

This one, the soup, seemed salty and watery tasting to me. The beans are VERY hard, and don't seem to cook well. I think that beans probably should be soaked and then cooked to taste right. Nile Spice has many other products that are...

Vegan. Natural. Low calorie. Very enjoyable instant minestrone soup. Great for anywhere you can get or make hot water. I love vegan soups. Instant soups are also a great flavor maker for your own soup creations. I use one cup of instant soup as a flavorful broth or base to add to a double soup made from beans [Westbrae beans are great!] and fresh veggies. Use your imagination and enjoy. Easy and fun. Prepare the instant soup and then add to the simmering or pre-cooked bigger pot containing the other ingredients. Heat together, stir, and serve. 140 calories, 8g protein, and 590mg sodium per cup. When preparing the cup of soup, it is important to let it stand re-covered as recommended for 5+ minutes and stir well. Nice vegan "top up" for those not yet on Amazon Prime and might need another item to qualify for Super Saver Shipping. Verified all vegan ingredients including the 'natural flavors' with Nile Spice Consumer Affairs on 2009-01-29. This review is out there for those for whom this makes a difference. Fast to make. Good to have around in case you ever don't have time to get food, or there's nowhere to get food from. (You do need hot/boiling water though!)
Tastes fine. I personally liked the Progresso minestrone soup better (the fat can). Obviously that's not nearly as portable or easy to open.

This is very chunky and as good as soup made of dried veggies can get. I'm also biased because the NileSpice brand makes other flavors that are a lot more exciting (the couscous ones) and if I'm just buying one type of soup from them I'd go for those flavors in a heartbeat. However ALL NILESPICE flavors have been good so far! (I've tried 4.) So you're safe w any flavor I'd say.

By the way, incase you're a sensitive eater: these brand of soups felt very heavy after I ate them though my hubby didn't have that problem (other reviewers apparently didn't either). My hubby suggested it was probably the dehydrated vegetables. Anyway, fresh stuff or watery soups that I just heat up (i.e. no dehydrated things to add water to) definitely sit better with me. If you have this problem, you can also just let the soup cup 'cook' longer (=wait longer than 5min). that seems to help.

- super chunky (with pasta and veggies)

If you are looking for a healthy snack or base to use for a wonderful meal, you can't go wrong with Nile Spice Minestrone Soup. For a snack, eat it on it's own. For a meal, toss in your own leftover veggies, chicken, beans, cheese, etc. I've also used it to zip up a pot of home-made soup. Just toss it in when it's almost done -- let it simmer for a while, and it's heaven in a spoon!

For a soup made with dried ingredients, it's absolutely wonderful. However, I strongly recommend that you allow it to "cook" for an extra few minutes in the bowl to soften the ingredients and bring out the full flavor.

We've purchased all the flavors of Nile Spice Soup, and every single one is a winner!

In comparison to other soups, Nile Spice is extremely salty. The problem with this soup is that the beans are not cooked properly. Skip it.

This is a great soup! I've tried a few other Nile soups and this is by far the best I've had yet. I always let mine wait about 10 minutes instead of 5. The longer the more tender and delicious!

The spices,beans, and taste of the Minestrone is just right. Much more flavorful than soup out of a can. I have sampled most of the Nile Spice soups and this is one of my top three. I use my Keurig to dispense hot water and enjoy in 5 minutes!

This is nutritionally a good product, but taste wise, close to cardboard. The beans stay hard and the noodles are almost not edible. It failed the taste test from two human adults and one usually hungry eats anything puppy. The puppy left it an went for kibble instead.

I purchased it as part of several soups from that company. I do like the potato leek, but not this one!
