Fast forward to 2 years ago, when I saw my 1st NordicWare aluminum shortbread pan in a King Arthur catalog. I gave it the "Skunk Eye" for months, not trusting that an "aluminum" pan could do the same work as my beloved ceramic ones. But, having received a $50 gift card for Christmas, it allowed me to purchase the pan and give it a try.
This is now my 3rd Nordic Ware Cast Aluminum shortbread pan. The 1st one was the Snowflake pattern; when I discovered that amazon sold it for half the price, I ordered a 2nd one from here, since I make over 20 pans of shortbread as Christmas Gifts and owning two of the same pattern really speeds up the process.
I was lamenting to a dear friend, after I searched the official NordicWare webpage, how sad I was that they did NOT show any other patterns except the Snowflake one. Well, we should ALL have friends so caring, because she emailed me a link to THIS pan, later in the day. Praise the Lord!, I ordered it instantly!Read more ›
I expect I will have these a long time.

I bake coconut mochi in this pan. It leaves a lovely design on the mochi. In order to get the mochi to release, you must liberally oil the pan with coconut oil. Read morePublished 18 days ago by naware
