I used this pan to make a cake for my grandson's birthday party. I did two practice runs on using the pan. A regular cake mix will work as well as the recipe that is printed on the underside of the label. I followed the instructions to fill the pan only 3/4 full but with a cake mix, I found this to be too much. Each section has a horizontal line as part of the design for each train car. Fill only to the top of this line so the cakes will be the right height. It is important to follow the instruction to hit the pan firmly on your countertop before placing the batter in the oven - this will eliminate any air bubbles trapped in the cake. When the cake sections are baked, wait 10-15 minutes then turn them out GENTLY onto a wire frame. DO NOT TAP THE BOTTOM OF THE SECTIONS before turning the cakes out since they will come out with some of the design missing.
However, this cake pan works beautifully. I found that a soft paint brush worked very well with hot soapy water when washing the sections out.

Giving 4 stars because the cupcakes are very cute WHEN they do come out. The snickerdoodle recipe that came with the pan was the only recipe that worked perfectly with the pan, but the cake was too dry and too sweet, so we cut the sugar by 1/3. And our solution to the dry cake was to serve it with light whipped cream and cold juicy blueberries on the side, which worked out very well. The fine details of the train cars did not come out consistently with other more moist recipes. We floured, used spray with flour, you name it, and got mixed results. Fortunately most pieces were salvageable with creative icing and decorating. We used organic juice gummy candy and piped small amounts of icing, and covered with strips of fruit roll-ups cut to size. It was perfect. Kids loved the cakes. We did have to make several batches to have enough "good" ones to serve a crowd of 21, but fortunately we ended up with several good train engines which were the most popular shapes amongst the boys. And now I have two tupperwares of "bad" chocolate cupcakes in the freezer to defrost and eat at my leisure, which is not entirely a bad thing... :)

The pan itself is not as nice as the similar one made by NordicWare exclusively for Williams-Sonoma. That one has the gold non-stick coating, and has a smoother finish. The nonstick coating on ours from amazon is the standard bundt pan non-stick coating, but it was rough and jagged along the edges of each cupcake, which I think contributed to some of the cupcakes not coming out cleanly. The jagged edges also snag on the sponge when cleaning. Maybe it is just a quality control issue, because we have another bundt pan from NordicWare where the nonstick coating is perfectly smooth.

I was skeptical at first- I didn't think the non-stick surface would really work as well as promised, but it really did work! I made sure to follow the exact directions, and the cakes popped right out- I tried the recipe that came with the pan and also a boxed gingerbread cake mix- both with equally great results. Our Twins' 2nd birthday cake was a big hit! Update four years later: Still works Great! no wear on the non-stick surface at all.

Comes out perfectly if you fill a little less than 3/4 up to the line- tap before putting in the oven (not after)- just used butter to grease pan- no flour- recipe on the pan was great. I would try a gingerbread one to do a polar express train. We used M&M's, icing, snow caps for coal and tootsie rolls for logs and twizzlers for tracks (my son was turning 2 so i did the tracks in the shape of a 2). I would try shoestring licorice if I could find it. I'd like to try it in Jello too. I can see it being used for many years with two little boys.

I used this cake pan to make my son's birthday cake and was so happy with the result! I did a few practice cakes, and most of them turned out well, including a pound cake from scratch, a Pillsbury chocolate cake mix, and a Duncan Hines yellow cake mix. Pam for Baking worked great--I sprayed it in the pan and then used a paintbrush to get it in all the nooks and crannies as another reviewer suggested. I had the best result when I filled the cups between halfway and 2/3 full. I felt it was better to just cut off the "muffin top" rather than risk it not rising high enough--then the train doesn't have wheels! Don't forget to tap the pan on the counter before baking--I forgot with a couple of my practice cakes, and the air bubbles definitely took away from the detail. I cooled them for about 10 minutes and then they turned out easily. I piped different colored icing onto the mini cakes and then used candy to finish them off. Finally, I arranged them in an oval on a full sheet cake (I had to bake 2 cakes so that I had enough train cars to make a good oval) and drew in a track with icing. The result was awesome!

comes out perfect every time! I love to make a white or yellow cake and put the batter in 4-5 different bowels with some food coloring, it makes it look so cool and then I can accent it with candy like they show on the picture or leave it. Everyone who has seen it thinks I rock... little do they know it only takes me 5 minutes to color the batter and then to decorate when it comes out.
