Best One Yet -- Better than the Rest,

We frequently pound chicken for our favorite recipes, which is why I was looking for the best meat pounder I could buy. My research led me to an old favorite, "Cook's Illustrated." They rated the Norpro Offset Meat Pounder the best of all the ones they tested. They liked the offset handle design, which relieved some of the tension on one's wrist.
I have to concur with "Cook's Illustrated." I have less wrist strain with the offset handle. The pounder has a good heft, and makes quick work of the meat. The disk is 3 and 3/4 inches in diameter. The overall length is 11 and 1/4 inches. My kitchen (spring) scales weight the Norpro at 1 lb. 10 ozs. The chrome surface is smooth, and could not be easier to clean. One only has to look at the photo to see how easy. I almost did not buy this because of the price. However, we use our meat pounder a lot, and the Norpro Offset Pounder has been worth every penny to my wife and I. Buy the best -- scream once.

If you are strong in culinary skills but weak of arm, this is for you. Perfect cutlets (veal, chicken, pork) are essential for perfect dishes (scallopini, piccata, medalions), and the Norpro meat pounder will let you achieve perfection every time.

Luxury Item That's Worth It...,

Most people that pound meat at all use the very cheap and inefficient ones that come with some knife and block sets. Since most of us don't end up pounding meat on a daily basis, a good tool for it would seem to be an entry on the bottom of any list. But anyone that enjoys tenderizing their own meat should very much consider this fine tool. I received one for Christmas and now have a hard time imagining how I got along without it. Its long, heavy, has an excellently shaped and weighted head on it, and best of all, you basically just tap the meat and let the weight of the tool to the work. It is very nicely finished, and a handsome tool that you won't mind hanging on a chopping block, or displaying on an island. By the way, this tool works very well in getting a head start on rolling dough for making pizza, or anything else. (I make the best home made pizza in the United States and roll a lot of dough). It works best when unlike pounding meat, you really rap the dough hard several times and shock it into being a little more flexible, and staying that way. There is no blood or other splatter, and in no time you have moved up to the rolling pin. Overall, a very well made and useful tool that is well worth the price. Recommended...

I have owned several styles of meat pounders, and this is by far the best. You can easily pound out fillets without making everything on your counter top shake. You use much less force with this design, so you don't end up with torn fillets. You can still mess up your fillets if your not careful, but you have much more control with this design.

Until I discovered this tool, I had to pound my meat by hand. When preparing your meat for a party, this easily leads to callouses. Thankfully, with the Norpro Meat Pounder, I can pound my meat all I want without undesired difficulties of the old school method. Ladies or those with small hands or arms may also appreciate the added weight and leverage this gives to increase the capacity of their meat pounding (not to mention, clean-up could not be easier).
I'm not sure if there is an automated solution available, but until I find an automated meat pounder, this simple product will definitely take care of all my pounding needs. If you do a lot of meat pounding by hand, I would recommend the Norpro Meat Pounder without hesitation. This would also make a great gift.

Most home cooks are going to need a pounder at one time or another. Some use a rolling pin and I have even used a rubber mallet in a pinch. The most common specialized pounders are shaped like a hammer and usually have a checkerboard-type "tenderizer" on the reverse side. The problem with most of them is that they are too small and can easily tear the meat. After years of not being happy with the pounders that I own I decided to try this offset model. Here are my thoughts:
Size: The over-sized "business end" of the tool is large, somewhat heavy and round. This spreads out the force of the blows and minimizes tearing. The length of the handle also gives the user good leverage. Weight: At close to 2 pounds this model makes quick work out of flattening a chicken breast or a slice of veal. Finish: The zinc alloy and chrome plating makes the unit attractive and easy to clean. Design: For me the offset design makes using this pounder a delight. As with any item designed for pounding you still must exercise caution and learn the proper technique to avoid turning a beautiful slice of meat into hamburger. This is a great meat pounder. I got this because of the heft of it. It is quite heavy. You just need to let the pounder do the work. Let it basically fall on to the meat with a little effort and it works like a charm. If you hammer your meat with it, it will pulverize it. I was also considering one of the palm sized pounders that you place in you hand and slam into the meat. After trying my friends I am so glad I did not get it. It hurt my arms. Especially on thick meat like chicken. It did have tenderizing disks that can swap in but I really did not need that function.
Time to make JB some schnitzel.

In general, I've had good success with this design. I like it. I use it. I wash it in the dishwasher and everything's going well. But I think the negative reviewers may be on to something in their complaints. Some people seem to have difficulty intuitively using the design and I'm not certain why.
If you plan to buy this or you buy it and have trouble, look at some of the discussions or videos where people use this device. America's Test Kitchen has an episode that reviews the product and demonstrates it and Good Eats has used it too. |
