This little tool--5-1/4 inches long--makes preparing string beans a snap. At the top of the hard-plastic slicer is a razor-sharp, stainless-steel cross blade; use it to remove a bean's top and tail. Then feed the bean into the slicer's funnel, which is spring-loaded to hold the bean firmly, with the bean's string to the outside. Push the bean firmly against the four sharp, stainless-steel blades until the bean slices emerge underneath. Finally, grasp the slices and pull the bean through. Voilà! The string is removed and the beans are cut, French style, into neat slices. --Fred Brack

Product Description

Granted, fresh green beans are delicious, but sometimes can be a little tough. By turning them into slivers, they become much less chewy, and are then known as French Cut green beans. Now you can slice them just so, with this convenient contraption.

On the Good Eats episode on milk and milk products, Alton Brown sliced vanilla beans with this product and dropped the four parts into the heated milk for the topping on the Tres Leches Cake. Having struggled with shriveled vanilla bean pods, I am very thankful for the recommendation.

I bought the slicer after seeing a cooking show where the cook used one exactly like this. Since then I have used mine and it perfectly slices beans, even taking off the outside stringy part. Well worth the cost!

Even though this item only frenches one bean it a time it's consistant, sharp and fairly quick to use; afterall, most of us are not going to be frenching 25 lbs. of beans in a sitting. I'm planning on entering some french cut green beans in the county fair this next month. We'll see what the comments are.
