I do not need a cleaver all that often, so I did not want to pay a lot of $$$$.
The Norpro is nicely balanced, plenty sharp, and has the feel of a quality product.
The handle is fitted very well. I am 100% satisfied with this cleaver.
If you are ordering a cleaver, know what you are after. This is for heavy duty
cutting through racks of ribs for example. If you want one for vegetables and fine
work like you see Asian chefs using, you want a much lighter and much sharper
vegetable type cleaver.

***quick chopping review***

The Norpro Kleve 7" cleaver is a very good quality cleaver that is sharp enough to chop ribs, chop steaks, chop chicken through bones, and chop chops(but not chopsticks, LOL).

its ergonomic handle makes the hand less fatigued and it's heavy enough to let the gravity do its work vs using too much of one's energy.

it's not ideal for chopping and slicing delicate and stringy vegetables such as scallions(spring onions)or trying to fine chop(and slice) or mince vegetables for it will not chop all the way through EASILY especially for those less trained in the art of chopping, slicing, and dicing

****DEEP SLICING REVIEW**** (more details)

1) Sharpness:

The Norpro cleaver is sharp enough to do heavy duty chopping. It does a fine job chopping through bones and ribs and chickens.

Sometimes, I like to make a pre-cut before I start chopping and the Norpro is not sharp enough to make an incision through the meat by itself without applying some force. But it does a good job chopping thick meats and veggies (such as taters).

The blade is not sharp enough to cut through vegetables such as spring onions or celeries without using more effort than an Asian Cleaver or a sharper cleaver or knife.

In other words, if one was to look for an all around sharp cleaver, this is not the one that is designed to cut through a steel can, then ribs, then parsley.(Joking about the steel can, of course, of course)

2) the handle:

The handle is VERY comfortable and ergonomic. That makes a difference if you have a big family or like to throw parties. The fatigue factor can set in when one is chopping for a lot of people, trust me.

Great performance for primary use, which was cutting poultry. Today, a huge weakness made itself very apparent after the "Handles are made of ABS plastic, the highest grade of plastic" decided to snap in the middle of a cutting session. No warranty of any kind I could find here or on the Norpro website. I would choose another cleaver for these two reasons, plastic handle and no warranty!

Got this product in March 2011, I thought that it was sturdy and well made. By June 2011 this items handle broke chopping a chicken bone. The handle which feels like it is one piece with the blade, turned out to be hard plastic incased in rubber which split in half. Could have been quite dangerous also. If you're looking for a reliable cleaver this is not it.

u see that metal part at the bottom of the handle? u think that's connected to the knife? WRONG !!!!!!!! cant believe they decided to cut back just for that small piece of metal. its plastic in the middle !!! u use the knife for making blows to a piece of meat w/ bones ! maybe its planned so it will break . i dont know. well mine is broken.

November 2013 Review:

The handle broke in half after having this product just 3 years. The metal at the end of the handle lead me to think metal went through the whole handle, but it does not. The handle is hard plastic. When I was cleaving a Thai coconut this morning the handle snapped in half. Luckily, I did not injure myself. I bought it for twenty five and thought it was good at that price. At sixteen, which I see it at today, it is an excellent price if you don't use much force to cleave things like coconuts. But, the lawyer in me thinks the company should have a warning on its product stating that it must not be used with much force.

November 2010 Review:
Original title: Excellent Cleaver
I bought this 6 months ago to cleave whole chickens and Thai coconuts. It works perfectly for both applications and I couldn't be happier with it. It holds an edge very well, is nicely weighted, and is attractive to look at on the magnetic knife rack. It was at the best price point of all the cleavers listed on Amazon, too. Don't waste your money on a fancy name brand cleaver.

Like others said, and I chose to ignore, the handle is make of PLASTIC and is NOT one METAL piece as it appears. The cleaver feels nice, sturdy and heavy, but after about 6 mos of butchering whole chickens and chopping through bone, the handle snapped cleanly in half during use. Take my advice, spend 10 or 15 bucks more and buy something that will last.

It's sharp out of the box, but not literally "razor sharp" I guess I will try to sharpen it with a ceramic fine sharpener, to have the real "razor sharp"

X50CrMoV15 - German steel. Very stain resistant. Other than that not much to speak of. The cryptic X50CrMoV15 stands for 0.5% carbon, the other 15% is composed of 14% or 14.5% of Cr, some Mo and V. I don't know who in German marketing came up with the idea to use X for Carbon, in periodic table it's C. 0.5% C content means, by definition X50CrMoV15 isn't a high carbon steel, despite of some marketing claims. In fact it has less C content compared to 440C steel. However, it's plenty tough and resists corrosion well. If you don't want to bother maintaining your knives this is a good choice. Except for the low edge holding ability of course. In the end, you end up sharpening it a lot more often, so low maintenance statement is really arguable. Used by Wusthof, Victorinix and others in their high end knives. Ref - X50CrMoV15 Steel Composition.

HRC 55: Very hard steel (e.g. a higher quality knife blade): ( Hardened High Speed Carbon and Tool Steels such as M2, W2, O1, and D2, as well as many of the newer powder metallurgy Stainless Steels such as S30V, 154CM, CPM-M4, ZDP-189 , etc.

downside: made in China, but Hey, for the price and the German material, is not a big deal, as long as you sharpen it once received, for sharpening advise check [...]
