CUT-UP mats would be more descriptive. Use 'em once & throw 'em away. My knives aren't the sharpest things to come down the Pike, but one use with a little 8" chef's knife virtually shredded these mats. I'm talking deep gouges here folks! And I couldn't get the gouges clean because the mat was scooting around the counter & trying to eat my sponge. No luck in the dishwasher either cuz they flop all over the place. I don't recall reading that they were flexible before I ordered 'em, but I've had flexible before & those held up very well. Unless you're looking for something disposable ... run away!

This item allows a different mat for each type of item e.g. beef, chicken, veggie and stays put fairly well. The down side is that with just one use the surface shows every cut and will soon be in poor shape to cut anything on.

These mats do not grip anything. They slip badly no matter what I do. I tried wetting the back side before using them and they still don't work. Must be very careful when trying to use these.

I use these for chopping. They are nice because they protect your counters, do not dull your knives, fold into a funnel shape so you can easily transfer chopped food into a pot/pan, and there are four of them. You can use on for meat, one for veggies, etc. They are dishwasher safe. These are about 10x14 in size. I like mine. The only thing, I thought they'd be a bit thicker and would grip the counter better.

I have to admit that I was skeptical when my wife brought these mats home a few months ago. I had been using a sturdy, large cutting board for cutting vegetables and bread, something I do almost daily. The downside was that it was so big, was rather hard to clean thoroughly because it was so heavy, and was a pain to store. But I wasn't sure that this set of flexible mats would stand up to the wear of daily cutting.

It's several months since I began using them. After using them twice I was sold on them. They wear well, and, unlike what some reviewers have experienced, they do not show any knife wear. They are flexible, which means that a person can funnel cut-up vegetables into a salad bowl or a pot with ease. (No more pieces of carrot and celery falling off the side.) And they are a breeze to clean and to store. Moreover, the gripping side does a pretty good job of sticking to the counter surface. Based on my experience, i would highly recommend this set of mats.

These are sturdy yet easy to bend when throwing your ingredients in the pot. The gripping side isn't super grippy, but it does its job. I have had no problems washing these in the dishwasher.

Great mats in nice bright colors. I wash them in the dishwasher and they don't warp or bend. I've only been using them a couple of weeks, but so far so good. ***edited 11/17/10 to say that they are warped pretty badly probably from the dishwasher. I guess they can't last forever but I'm going to try a different brand.***

I bought these for an out-of-town trip to cook Thanksgiving dinner for my boyfriend's grandfather and nearby relatives. They did not take up much room or weight in the suitcase, and I found they worked exactly as described. The colors were a helpful reminder to keep poultry, other meats, and vegetables on different surfaces. They protected the table completely from all the chopping I did with my very nice cutting knife, did not slide around, withstood repeated uses and dishwashing, and were cheap enough that I didn't feel guilty throwing them away when finished.

The only drawback is that they do not have any kind of "lip" like a traditional cutting board, so if you are cutting things with juices, you should put a towel underneath to catch whatever runs off.
