Product Description

Amazon.com Product Description

Create ultra-smooth soups, sauces, and stocks with help from this three-piece chef's set. Constructed of corrosion-resistant stainless steel, the set's conical chinois features a fine mesh sieve that captures even the smallest of food fragments to ensure lump-free results. The chinois sports a smooth rim that won't scratch hands or fingers while working, as well as a long handle for easy dispensing of ingredients or disposing of captured seeds, peels, and other unwanted fragments. An included rubberwood pestle makes it simple to puree fruits, vegetables, and berries for a variety of desserts, dips, dressings, baby foods, and more, while helping to push denser ingredients through the mesh to avoid waste. Best of all, the set provides a chromed-steel stand, which can be used to stabilize the sieve over pots, pans, and bowls from 4 to 10 quarts--great for pressing fresh ingredients directly into roasts, stews, fruit sauces, and other dishes. A necessity in any professional kitchen, the three-piece set measures approximately 7 by 7 by 9 inches.

Product Description

A chinois is a standard in professional kitchens. This fine-mesh sieve removes lumps and renders sauces silken, strains seeds and peels from tomatoes and berries, and produces the smoothest purées and soups.

4.0 out of 5 stars works well for me September 29, 2010
By L.C.
I bought this product to make jelly and jam. It works quite well. The holes are a little large (as was noted in some other reviews) and therefore tiny seeds do slip through. I solved this problem with a little extra work by running the juice (containing seeds) through a juice bag (these are sold with the canning supplies). That removed any seeds and large pieces of pulp that slipped through the holes in the "chinois".

The only trouble I did notice was during cleaning. Pulp gets caught in the crevices at the bottom of the cone. These particles proved difficult to remove with a wash cloth, sponge or even bottle brush. However, an unused toothbrush did the trick nicely and in short time.

I would recommend the product. Also, it is stainless, which I prefer to aluminum when the utensil is intended for contact with food. I noticed that many of the other models for sale were aluminum. I would recommend trying this product.

1.0 out of 5 stars Not a chinois August 27, 2011
Amazon Verified Purchase
Pictures and words DO NOT accurately describe this item. This is a china cap, not a chinois. It is a full piece of metal with stamped out circles, and "fine mesh" is a gross exaggeration of its construction. I have yet to make a sauce or puree with it, but my expectations are fairly low regarding what it will keep out of the finished product.

1.0 out of 5 stars Disapointing October 16, 2011
By Galor
I used the chinois to make apple sauce. The pestle is too small to work well for the cone. the cone does not fit the stand well and moves around when using the pestle and the handle gives the unit very poor balance.I will Make a larger pestle and retrofit a handle for balance and comfort but don't know what I can do about the sloppy fit of the stand.

5.0 out of 5 stars Perfect!
This chinois is exactly what I needed. It's strongly-built to last and does a great job with sauces and stocks.

3.0 out of 5 stars looks pretty but its small
Looks better as an ornament on the shelf, it's not very fine so you can't strain very fine sauces. The quality is good.

5.0 out of 5 stars Must have product for home chefs
The chinois is a great tool to have in your arsenal for most all sauces. We use it a lot during ice cream / sorbet making to help ensure a consistent end product.
