Norpro Vertical Roaster with Infuser

I am purchasing this based on a test performed by America's Test Kitchen. They tested about five vertical chicken roasters one of which was over $100. This was their favorite in part because it held chicken high when roasting. During the preporation process they put chicken in oven till skin was crisp before appling glaze. They said skin would be rubbery if applied before roasting. The roaster was put in a pan to help prevent juice from spilling ito oven. If you have never watched America's Test Kitchen you should tune in to show ( usually on educational channel ). They also sell cookbooks and DVD's of all their shows. They do extensive tests and are very through. Hope this helps. I am ordering one and will do my own personal testing so you will have to try it yourself.

The vertical roaster is fabulous. The infuser works well. However, you do have to be careful! The chicken cooks much quicker using the vertical roaster, and if you use the same time frame as cooking flat in a roaster, you will end up with very dry chicken. Suggest that you inject wine under the skin, rub a little butter under there, and cut about 10-15 minutes off of your roasting time. Should be perfect. Ooo... and one other thing. Place a sheet of foil on the rack below the vertical roaster. If the chicken you are roasting is a little too fatty, the pan will overflow and you will have a mess. Trust me. Pan could be a little larger to accomodate the fat. Once you learn the quirks of using it, it should be a nice addition to your healthy kitchen.

Got this based on the recommendation of Americas Test Kitchen. I have used this a few times and truth be told (but of course!), it really isn't any better than a beer can, and you have to wash it. With the beer can, all you have to do is drink some of the beer. Well within my job description! In terms of results, no difference at all. None.
