Oil stones differ from water stones in that the oil is meant to both lubricate the blade + stone and act as a floculant for the metal dust that is abraded away. A water stone itself abrades or wears away from the action of sharpening.

Using the two OIL stones here in combination it doesn't take long to sharpen knives, plane irons, etc to a razor edge. I sharpened all our Wustov kitchen knives with these and I can now easilly shave with our steak knives and carving up a T-bone steak is like butter. The nice wide and long stones make sharpening knives or plane irons a snap. I highly recommend this combination.
