Oil stones differ from water stones in that the oil is meant to both lubricate the blade + stone and act as a floculant for the metal dust that is abraded away. A water stone itself abrades or wears away from the action of sharpening.Using the two OIL stones here in combination it doesn't take long to sharpen knives, plane irons, etc to a razor edge. I sharpened all our Wustov kitchen knives with these and I can now easilly shave with our steak knives and carving up a T-bone steak is like butter. The nice wide and long stones make sharpening knives or plane irons a snap. I highly recommend this combination. |
