I originally had to read this book when I went back to college for my second degree. I am a nurse in a small private practice, and realized that this text was wonderful in explaining the different ways in which people could work to having better nutrition, and what's more, was excellent in explaining why. This book explains everything, from digestion of different kinds of foods to the way in which cholesterol is stored in the body. I found this book so useful, that I ended up buying it for my practice so that I can show and teach my patients in our nutritional education classes.
This book is not only a "must read" for students, but is extremely helpful for everybody who is interested in eating better and living healthier. Timothy Lassiter, author of Three Degrees of Separation and The Devil You Know

This book proved to be very complete in its explanation of nutrition and its effects. This may be menial, but I was disappointed that there seemed to not be a hardcover option to this book. My books always end up not looking their best after I'm done with them, so I prefer hardcovers. All in all it is helping immensely with the Nutrition & Food Science course I'm taking now, since it illustrates well what I do not understand from my instructor. Hope it helps YOU!!

I had to get this book for my required nutrition class (a GE ). Anyway the book reads like a science book. It's pretty decent overall and easy to understand/follow.
