These bowls are of fine quality copper. They are made of medium weight copper plate. I prefer to have one of thick heavy weight copper to resist dents. Unlike stainless steel, copper is a soft material. Anyway all the bowles I saw in the market are of medium weight and cost twice as much. You may find a thick copper bowl in an antique shop. The smallest bowl is too small...

Based on the literature on this web site, when I bought these bowls, I thought unless you cooked with them (namely heated them up with food in them), you could leave the lacquer on. However, once I bought the bowls, the directions said if used with food, the lacquer should be removed using a lacquer...

Based on the literature on this web site, when I bought these bowls, I thought unless you cooked with them (namely heated them up with food in them), you could leave the lacquer on. However, once I bought the bowls, the directions said if used with food, the lacquer should be removed using a lacquer remover.

REMOVING THE LACQUER IS COSTLY, TIME CONSUMING AND MESSY:
That being said and looking at the laminate removers out there, most are made of methylene chloride a deadly poison. I opted for a more expensive safer citrus lacquer remover. Also you need to polish them (on the outside, to compensate for the loss of the lacquer) This lacquer remover, brush, gloves and scrubber almost tripled the cost of these bowls. I'm still not sure the lacquer had to be removed to use for mixing other food items, but I didn't want to risk lacquer coming off in my food, if this coating was not be left on there.

WHEN THE LACQUER IS OFF THE BOWLS TARNISH:
Once you take the lacquer off the bowls have exposed copper for providing extra lift to your eggs. However, when they are exposed to air they tarnish.

IF YOU ARE USING FOR OTHER THAN TO INCREASE VOLUME IN EGGS, MAYBE NOT THE BEST BUY:
I originally bought these bowls to mix up eggs for scrambled eggs and for other items as pancakes. I like the little ring that made them easy to hold onto. This is why they were purchased, not to fluff eggs. Also, these bowls have round bottoms and will easily roll off the countertop if unbalanced. This is better for decoration and fluffing eggs than day to day use.

A GOOD BUY IF FOR DECORATION ONLY:
Given that including the need to remove the lacquer and the continuous polishing required after, is most useful for fluffing eggs only, I would opt for these pans at this price for decoration only.

Just bought these bowls as a gift for someone after reading how copper reacts better with eggs to make lighter souffles. The bowls do look good but they arent stunning like in the other reviews. The brass handles do detract from the look a little. They are medium weight and the biggest one will hold about 1.5 quarts (not that big but more than enough for mixing eggs). I have seen nicer copper bowls at williams sonoma but they are twice the price for just one bowl.

Obviously the main reviewer did not do a simple google search, because if he did he would know that scientists do indeed know why egg whites whip up better in copper bowls: check out chemistry.about.com/library/weekly/blcopperegg.htm (no www.). And the rounded bottom is also helpful for whipping egg whites, although not for setting the bowl on a table or counter.

These bowls are beautiful and useful. Currently hanging on my kitchen wall, I have already put them to use. The resulting egg whites are just as they're supposed to be when beaten in a copper bowl.

The product itself was outstanding. The shipping service is another story: There had been a major storm in this area and the shipping company took it upon themselves to forward to a post office address rather than the physical address which I had requested. The product did not arrive as expected. It was a gift and I was in another Country. I advised both Amazon and the product company and the product company immediately delivered another set. When I returned to the States and went to the Post Office, I had a postal charge but I also had another set of bowls, which I will now see what I need to do to pay for the second set, hopefully minus the shipping charge. I'd been wanting a good set of copper mixing bowls, and these definitely fit the bill! Egg whites beat perfectly fluffy. And, each has a brass loop so they can hang on a wall for decoration, or off a pot rack. You can't beat these bowls for the money!

This product
