I own a ridiculous amount of cookware. 27 cast-iron pieces (mostly LODGE cast iron), 32 enamel-cast-iron (all but 8 are Le Creuset, the others are Mario Batali and Rick Bayless), a set of stainless steel with copper bottoms, a set of anodized aluminum, a set of copper pans with stainless still lining, plus many others (paella pans, woks, stock pots, griddles, etc.) ... I enjoy cooking.

I didn't get this pan because I needed it, but as a present about a year ago. I don't like to write a review until I have use the thing I'm reviewing for some time.

After one year owning this pan, I found myself using this pan a lot more than similar pans made of other materials. It works like cast iron with several advantages. Like regular cast iron, the pan works really well if you heat it slowly for several minutes until it heats all the way through, and the pan distributes and maintains heat very well.

If you heat the pan to a moderate-high heat, and add a bit of vegetable oil, it works great and nothing sticks to it. It works like a good stainless steel pan with the heat retention of a cast iron pan ¬-Like a good stainless steel pan, if you over heat the pan or start cooking before it has reached the right temperature, things may stick.

I read the other reviews, I just can say that this pan has been used about once or twice a week for close to a year and I don't' have any rust spots, heat discoloration, an things don't stick any more than a regular cast iron or a good stainless steel pan.

Advantages I see over regular cast iron:

-I like it over cast iron because I don't have to worry about seasoning the pan

-If I have to scrub the pan, I don't have to worry about loosing the seasoning.

I have been using the 10" frying pan for two weeks and here are my impressions so far:

- Very tough material: I washed it in the dishwasher, used metal objects to scrape burned bits and there has not been any pitting or scratching;

- Good heat distribution: It does not seem to have any hot spots;

- It does not retain any flavors and it can be used for fish and meat, for example.

Conclusion: It is more expensive than plain cast iron, but it might worth the price if you don't want to bother with seasoning, special cleaning and drying.

I should have believed the other reviews, but I had hoped mine would be different. No such luck. After washing the pan, I heated it on the stove to thoroughly dry it before lightly oiling it ( as suggested in the manual) and putting it away. Even though I had carefully dried the pan with a dish towel, when put the pan on the heat water/steam started bubbling up from a pit in the nickel, discoloring the area around the pit and decreasing my confidence in the pan's overall longevity and quality. I guess I could return it, bit I'm not optimistic the next one would be any better. Lesson learned -- listen to other reviewers. Maybe it won't be a problem longterm?

good advice. This is a fantastic pan. Clean up is very, very easy
and you get no after taste from other items previously cooked in it.

Heating is even, cleans up great, no need to season, is even
dishwasher safe!! You simply cannot go wrong with this pan. I plan
on buying the others available too.

This pan is awesome! I love to cook but hate to clean up. This pan cooks so evenly like normal cast iron but no work to clean up and season just throw it in the dishwasher. I use it for everything even on the grill. Left the pan on the grill to long and burned my food and it still cleaned up easily with a brillo pad no scratches. Just ordered the ribbed grill pan with flat opposite side, going to try it on a camping trip.

Granted, it has gotten discolored, but I've put this thing over an outdoor propane burner/turkey fryer, left outside for months, scrubbed it with steel pads, and it keeps on performing.
All of the heat properties of cast iron, without the fussiness, although not the same non-stick properties.
Only a star deduction as I would have liked a lid.
