Incredibly easy, delicious cusine,

I have cooked just about every recipe in this book at least twice and it was all very easy and absolutely delicious. My friends ask for several of the dishes over and over, including the Lentil Soup with Spicy Greens (the best lentil soup I have ever had), and the Penne with Broccoli, Red Pepper and Garlic.This book alone has given me the reputation of being an excellent cook, but I'll never tell it was the book and not me! I highly recommend this one to anyone who wants to eat very, very well and boost their reputation as a cook. I would buy copies for everyone I know except I don't want to share my culinary secrets....Thank you Maria Robbins.

This book is filled with wonderful recipes. My family asks for me to make them again and again, and when I have guests over I always rely on this book to make something wonderful for them. I have gotten many compliments, and many satisfying meals from this book and I would heartily recommend it to anyone. I especially like that she does not use "replacement" foods. Even though I am a strict vegetarian, I do not care for tofu, seitan, soy cheese, or veggie meats, which seem to pepper so many of the recipes in other vegetarian cookbooks. This is just good plain food!!

I really like the recipes in this book, because vegetarian meals don't need to be entree-side dish in format. You can use good fresh ingredients to make great meals, and this is an excellent resource. But I want to warn those who may be new to vegetarianism that the recipes are not stricly vegetarian. At least one uses fish sauce, and another uses worcestershire sauce, neither of which is vegetarian (worcestershire sauce has anchovies, which are fish). If you're a pesco-vegetarian (can eat seafood), or if you just want meatless meals, you're fine; if you are actually vegetarian, watch the ingredients carefully and make substitutions as appropriate. The author herself is not vegetarian and probably does not realize that these ingredients make a meal non-vegetarian for most of us.

I love this book! I have had it for many years and I have had my meat eating friends and family ask me for some of the recipes. No weird, exotic ingredients, everything can be found at your neighborhood grocery store. This is a great addition to your cookbook library...even if you are not a vegetarian.

The recipes are delicious and nutritious, but require way more than one dish to prepare. In fact, I had a whole load of dishes on my hands after making Spinach-Lentil Pasta. It was worth it, but I thought this book would have simpler recipes. Also, the writer openly admits to not being a vegetarian herself, so if you want basic, staple recipes for a vegetarian diet, get a different book. However, it is a nice addition to a veggie library.

I actually bought this book because my dr said I needed to go on a low-cholesterol diet and the low-cholesterol cookbooks weren't going to help me with the transition because I found those recipes bland, bland, bland. So, I started checking out the vegetarian cookbooks. I wound up with 6 cookbooks between the 2 subject matters. Every single recipe in the One-Dish Vegetarian cookbook has been absolutely delicious even to a mid-western raised "where's the beef" type person. Some of the recipes sound strange (for example, Spaghetti with carmelized onions) but don't let that keep you from trying it. This was actually one of my favorites. Only one word of caution...the portions are very large. I started splitting the recipies in half and my husband and I still had enough leftover for my lunch the next day. I did NOT half the seasonings though. I do have one tiny complaint--the "one-dish" name is misleading. You will have a little dishwashing to do....

This is a great cookbook. I recently checked this book out of my local library and the soup and stew recipes are great...especially for this time of year. I was impressed by the fact that most of the recipes are vegan or could easily be adapted. I highly recommend this book.

I bought this book based on the good reviews, but unfortunately I did not see any recipes that I found all that appealing, and many of them called for ingredients that would be hard for me to find. To be fair, I live in a pretty rural area where lots of things are hard to find without having to drive 50 miles. I returned the book.
