Penelope has written a series of excellent books in the field of Spanish cooking. I have them all, since I am an importer of Spanish food, which my family sells over the internet.

This one is especially down to earth and practical for the average American cook, and at the same time is quite authentic. You do not need to be an accomplished cook of a foodie to recreate some of her dishes. I heartily recommend it.

Of the 82 recipes, all worthy, in this 2009 publication, 70 also appear in essentially the same form in two of Casas' earlier works: 51 in La Cocina de Mama (Random House, 2005), and 19 in Delicioso (Alfred A. Knopf, 1996). Anyone purchasing One Pot Spanish who already owns the two earlier books would get little more for the money than metric measurements (in addition to American) and color photos of finished dishes. It's puzzling, given the great debt to La Cocina de Mama and Delicioso, that nowhere in One Pot Spanish is either of these books acknowledged as a source or even as part of Casas' bibliography. My rating of the book reflects this omission, which is capable of misleading a collector of Casas' books into thinking he or she is purchasing new material. On the other hand, One Pot Spanish would be a good purchase for someone who owns none of Casas' other books and wants just one. As I said earlier, the recipes are all worthy.

We own every book Penelope Casas has produced. They are simply indispensible. Our copy of Delicioso is written on, food-splashed and much loved. We've already started cooking from One Pot Spanish and it's another gem.

Nothing in this world is like the cooking from Spain. I use Penelope Casas books in my Spanish classrooms to teach my students that no, we do not eat tacos and enchiladas in Spain! ¡gracias Penélope!
