This book gives very useful tips in cooking itself. There are a variety of recipes. I have made some of them already and the taste is fantastic. Please keep finding those old recipes and converting them to correct measurements. Thank you again for a wonderful cookbook. I have your other book as well. I do open-hearth demonstrating at a farm museum and the other artisians look the meals.

The Open-Hearth Cookbook: Recapturing The Flavor Of Early America by Suzanne Goldenson and Doris Simpson is an interesting (and even inspiring!) collection of recipes drawn from the early times and kitchens of America. From Cornmeal Biscuits; Soft Gingerbread; and Pumpkin Pudding, to Wild Blueberry Tart; Oatmeal Cinnamon Bread; and Green Lip Mussel Stew, The Open-Hearth Cookbook reinvents the ideals of nostalgic cooking, educating the reader of how to use roast, toast, bake, broil and more with such devices as dutch ovens, fireplaces, waffle irons and many more, as well as the proper wood to use in particular procedures. From first page to last, The Open-Hearth Cookbook is increasingly informative for all readers interested in age-old cookery practice, as well as those merely intrigued by historical innovation in the culinary field of American culture.

So far, I've noted it seems well done. There is some history behind American fireplaces and hearths. Then it goes into equipment and utensils of the time, and what modern items you can use in their place. There is also a resource list in the back, should you wish to pursue obtaining replica items.

Please note: if you're looking for solely a cookbook, you may be disappointed in this volume. It goes into history, techniques, utensils, safety, and resources (for supplies and education); recipes are only in one chapter.

But I'm pleased with it and think it was a good choice as a gift for someone interested in getting started with this form of cooking.

Lets face it, we do not live in Colonial America any more. Most of us have a pre-fab fireplace or a much smaller brick one. This books gives great ideas on cooking in both a large fireplace and a small one. It is full of wonderful advise. I like the book and it has helped figuring out how to use my fireplace at home. I highly recommend it.

Yum, Yum! There is NOTHING better than hearth cooked food in a cast iron pot. Indoors or out, hearth cooking produces high quality food which is worth the effort. Trust me, I know! This book is an easy to read dive into the topic of how to cook over an open fire. Although it may seem silly, most people don't know how to do this. These Boston based authors (meaning this book also applies to you urbanites) researched the topic in depth then compiled it here for a gentle read. It makes it easy to try for yourself. If you or someone you know want's a cooking challenge, then get this book! You will not regret it.
