Buckwheat is a wonderful whole grain that's packed with nutrients, especially protein. It has a mild and earthy, nutty flavor. It makes an excellent side dish and can replace rice or any other grains called for in salads, pilafs, casseroles and more.

Organic Buckwheat Groats are the hulled seeds of buckwheat plant. These soft white seeds have a mild flavor, but when toasted or roasted, they have a delightfully intense flavor. Groats can be steam-cooked like rice for salads and side dishes or ground in your own mill into fresh flour.

But I am finding that they are extremely versatile. More often than not, I will add them to oatmeal (hot or overnight oats) and once they've soaked I have thrown them into smoothies. I plan to also go savory with them as well as add them into granola recipes. They are crunchy and nutty in flavor and I have also taken to munching one or two right out of the bag. Red Mill doesn't disappoint, bag came intact with no leaks. No complaints, I will definitely make these a pantry staple.

I really liked the texture, although it can be grainy depending on how smooth you can blend it, but I'm use to eating/drinking more 'natural' type foods. I had my doubts about this grain, especially because buckwheat pancakes did not settle well on my stomach. However, not only do I NOT have any problems with this grain, in this form, it is delicious! And now that I'm on such a restricted diet for IBS-C, experiencing new gluten-free grains is a bit limited in scope. Plus, old tastes die hard. I am suppose to cook it tender-chewy. (Ugh!) I never liked anything cooked chewy. I did like everything mushy (like what I was raised with), but add a little good cold pressed oil and salt after cooking and this is one of the best meal additions in my arsenal for IBS-C relief.
