Yes, the fat content is a little high in a lot of these recipes. But for a special occasions, company or a holiday, these are fantastic dishes! I wish there were more vegetarian cookbooks that were not always geared for vegans. These recipes attract my meating-eating husband in to the concept of vegetarian cuisine.

I was hoping for easy vegetarian dishes that are full meals that can be assembled and baked in the oven. I have one such meal I make often - a beans and rice casserole- and I was hoping for more great ideas. The author nicely includes nutritional information - one can clearly see that almost all the recipes have calories from fat in the range of 40% to 70%,

I just LOVE a cookbook with pictures and this one's got them! It is so nice to know if my preparation is correct and for all the dishes that I tried in this book my version turned out just like the photo.

This book is full of really great vegetarian recipes that are baked. My personal favorite was "Zucchini-Tomato Casserole". Tomato, zucchini, feta cheese - what could be better. Even my kids liked this one. And the "Potatos with Porcini Filling" was absolutely heavenly. I added a smidgen of low-sodium colby on top and had to fight off the family for one of these.

If you are new to being a vegetarian (like I was) then this book is a great introduction. Most of the recipes are very thoughtful and interesting, not just the eggs/beans recipes seen in most vegetarian books. I wholeheartedly recommend this book. Would have given it more stars but 5 is the highest!
