This Paderno World Cuisine 15.75 by 11.825 inch blue steel baking sheet, with its relatively high flared edges is suited for baking and browning large, dense dough products. The sheet allows for full exposure to the heat of the oven. It is made of 1/16” thick, black steel.

If you season this properly and make sure to dry it whenever it gets wet, it is a fantastic non-stick cooking/baking surface.

All you have to do is paint it with a THIN (do not use a lot or it will puddle and not work as well) coating of canola or other oil and place it in a cold oven, turn it on to 350 and let it heat for about an hour, then turn off the oven and leave the pan in there until cooled. Wipe off any residual oil and it is ready to use...and pretty close to non-stick! Think of this like cast iron only not as heavy and bulky. With repeated use it will only get better (again...just like cast iron).

While this metal pan was treated to help prevent rusting, it is recommended that you dry it immediately after any washing...never letting water sit it. It actually is so slick when seasoned properly that it needs very little washing or scrubbing. Food just slides off.

I bought this pan to use for deep dish pizzas and it is perfect for that. Even the Detroit Style Pizzas, which have cheese right up to the pan, come out with ease.

I bought this pan to make Detroit style pizza (a la Buddy's) and it is absolutely perfect for that. Once the pan is thoroughly cleaned and seasoned it is a breeze to make a perfect pizza crust in this pan. As another review says, even with melted cheese right up to the edge of the pan, everything slides out easily.

Dont let the name Blue Steel confuse you. Its essentially the same thing as carbon steel. You need to treat it just like you would cast iron. Season it with oil ( i prefer flaxseed). Dont let it sit in water. Dont use soap. Its just as non-stick as cast iron or carbon steel.

This has a tall flared out top perfect for making pizza as well. This is a half size cookie sheet.
