I did a lot of research before purchasing this particular pan. My objective was to have the right size to use on my 18" ceramic cooker. This pan is perfect. It works because the handles turn up instead of out as most do. The pan heats and cools really fast, just what is needed for cooking paella dishes. I also have used it to cook a turkey. The bird was placed on a rack to elevate it from the pans surface. The pan became a sort of heat shield and also cought the drippings to use in making gravy. Just a couple of uses I have found.
The pan does require some care to keep from rusting, but then most all valued tools need some sort of care. I think that any one who has an 18" ceramic cooker will benefit greatly by having this pan.
