While we certainly enjoy Pamela's chocolate cake, this vanilla cake is exceptional. I always add to my recipes; just can't seem to let them be, so I add an extra egg or some sour cream or some organic grated coconut with some coconut or almond flavoring and this just can't be beat. Frost it with the vanilla frosting to which organic grated coconut has been added or the dark chocolate frosting and watch it disappear!! I am surprised that some cooks have found a poor texture. This always turns out perfectly and I am a high altitude baker (Colorado Springs). I do use coconut oil instead of butter; maybe that is the difference.

One of the best "VANILLA" cake mixes available. Many products made with chocolate have a great texture. But it is difficult to find a vanilla cake mix with decent texture.

This product contains inulin. It's not listed as an ingredient on the amazon.com listing but, it's listed on the package I have and, on Pamela's website here:[...]

Inulin is the fiber in the "clear dissolving" fiber supplements. This stuff may not give you problems and if not, this cake may be fine for you. However, it would be advised not to serve this to unsuspecting guests.

Gas and discomfort is one thing but, brick hard bowels that have you on the verge of calling 911 for surgical extraction is NO PIECE OF CAKE!

Pamela's pancake mix rocks my world so I thought I'd try the vanilla cake mix. I used the cake mix to make a pineapple upside down cake recipe listed on the side of the package. I baked the cake in a cast iron skillet so the outside would be good and crunchy. The only part of the cake that was tolerable to eat was the outside edges that were most coated with butter and brown sugar. The taste of the cake itself was very strange. I would never try this product again. Last month I tried King Arthur's gluten free yellow cake mix and was very disappointed with the texture. I guess my quest for a good yellow/white cake mix continues...

My Daughter asked for a carrot cake for her birthday. I was skeptical that I could make a wheat-free carrot cake, but the Pamela's Vanilla Cake Mix had the recipe right on the side of the bag. I followed the directions exactly and the cake turned out perfect. Everyone who tried it couldn't tell it was wheat-free. It made a moist, flavorful cake. I love all of the Pamela's products we've tried!

Who says cake mixes are only good for making cakes? Not me! Just visit the Pamela's website for a few ideas. My family's favorite use is as a topper for fruit cobblers. Just layer some fruit into a baking pan, sprinkle some of this on top with some pats of butter or margarine, and voila! An excellent treat - especially great for warming up on a cold night...or a la mode. Maybe I should go make some right now...

I am a sworn from-scratch baker. With the possible exception of the Bacardi rum cake I used to make every Christmas when I was a teenager, this was the first cake mix I have ever used in my life. I bought it because it was on sale at the local store and I won the Pamela's vanilla frosting mix in a giveaway, so I thought what the heck.... Well, my husband, who is not gluten free and not a "cake person" ate a huge piece of this with ice cream and claimed it was the best cake he has ever tasted in his life.

I made it according to package directions but used four eggs instead of three (the package says to do this if you want a fluffier cake). I also added extra vanilla extract. The cake was moist and fluffy and amazing. I am so impressed. I may have to do Subcribe & Save on this one. So much for from-scratch baking.

The frosting mix worked nicely too, by the way, although I found it got airy pockets in it so didn't spread like tub-based frostings, and didn't look as pretty.
