Since I found this book in the 80's, it has been for me an invaluable source of inspiration, knowledge, and professionalism from Mr. Sultan. It covers the whole range of products in the Bakery, from Bread to laminated doughs, from Premixes to frozen products, from cookies to english muufins, almost everything you want to learn you can find something in this beautiful book. Practical Baking from the same author it is also very good, but in this case is more for professionals and people interested in producing high quality products. Using Butter instead of margerine or shortening, using yolks instead of whole eggs, etc.
I have purchased this book many times because I like to give it to baker friends as a present. I recommend it for sure. Thank you Mr. Sultan

This is a great book for those of you who own bakeries and wish to make desserts in quantitly and quality. Along with recipes, Sultan gives you and education on pastry making so with thorough reading and examination, you can not fail. Enjoy!
