Pegasus Kalamata Extra Virgin Olive Oil is made from some of Europe's finest olives -- the world's finest. This oil is lighter in flavor than most extra virgins, making it a good choices for cooking or when you don't want an over-powering olive flavor in your food. The acidity range of 0 to 0.8% is amongst the lowest you will find. At this low price the value is hard to beat for a real Extra Virgin Olive Oil.

First of all, if you can tell the difference between Virgin and Extra Virgin Olive Oil then you most likely know you have to go with a Greek oil, maybe Spanish if you really have no other choice.
Even amongst greeks, Kalamata oil is held in regard, and this particular one does not disappoint, however most americans have no idea how to use the it.

DO NOT USE EXTRA VIRGIN OLIVE OIL FOR FRYING! Yes, you heard right, not good for frying. Even corn oil will be better for frying than Extra Virgin.

Extra Virgin is for salads, spreads, dipping, crude consumption. The TRUE Extra Virgin (that you will not be able to buy outside the olive farm) is actually unfiltered, so a great deal of the olive fiber is still floating in the oil. The commercially available Extra Virgin si filtered, but the great taste still comes from the particles of olive. However that makes for a low smoke point, so frying in it not only wastes a great tasting oil, but it is also not recommended.

Virgin Oil (without the extra) is the second press and sees a great deal more filtration. This makes it much better for frying, but still not recommended!

Olive Oil (not virgin) is ok, but you can find better oils for frying and better oils for salads, so why bother?

Mixed origin or blended olive oils are not recommended, period. Stay away from them as much as you can: chances are you will be eating re-filtered and re-refined USED fast food oils. Ignore the colorful labels, particularly if it was bottled in the US, as 90% of the "tasters" cannot tell the difference between Organic Extra Virgin and repurposed and flavored fastfood oil! This is not a joke!

Conclusion: I only purchase Kalamata Extra Virgin Oil, and the Pegasus is great even though shipping costs as much as the oil! It is not the best oil I ever tried, but it is one of the best that made it to the US, and a good deal.
