These Szechuan ones are 99.9% just the husk (shell) and virtually none of the peppercorns. Roast them and crush them to get the flavor and texture right. If you don't roast them and crush them up they'll be chewy and lack the flavor you expect. I am used to seeing more of the peppercorns mixed in which I crush up with the husks as I roast them. Yummy.

Not sure what the problem is exactly, but these were totally tasteless. You could put several of them whole in your mouth and chew them up and they had no flavor or smell. No burn. These were from the Franz Market seller. They shipped from Thailand. I read there are other varieties of prickly ash seed hulls that grow in asia and are much less flavorful than the ones from Szechuan. This may be the case. It's also possible that they were over heat treated to kill citrus fungus and the flavor was driven out. Either way,just wanted to give fair warning to others .

The package of Szechuan peppercorns I received was well-sealed in a clean plastic bag, and the package contained mostly the peppercorn husks, which are the most flavorful and desirable part of this spice. However, the aroma is not very strong, and in fact is quite mild compared to even the fairly pedestrian Szechuan peppercorns purchased in a typical Chinese supermarket (in my case, 99 Ranch Market of Daly City). When you open the package, you don't get much of a whiff of anything; chewing on a raw peppercorn husk yields a mild Szechuan peppercorn flavor, but it is -nothing- like the strong numbing sensation that you get with good product. I was hoping for better quality, but these spices either come from a less-than-flavorful cultivar, or they are just too old.

Great tasting, very fresh. Others have complained that they taste was not good, but I can't agree. Worth the price.

Follow-up: These were great for about 6 months, then they got stale, and the taste diminished significantly. I suggest you not buy more than you'll use in that time. Also, if you're going to grind them, I recommend toasting them first.

These pepper corns are o.k. The package had some stems and debris, so as soon as I got the package I sifted out the stems. They really don't taste bad at all if you toast them before you use them. I have had better – but for the price not so bad!
