This is one of my favorite books on pickling. When my collection of 50-60 pickle books was stolen it was one of the first books I replaced. I love this book, BUT...it was written to European standards. Any of the recipes I make from this volume I mark REFRIGERATE ONLY on each jar. I consider this a cookbook and NOT a book on food preservation. USDA is very specific about safe home canning. I know, I teach for them through the Master Food Preservers program. Buy this book, enjoy the recipes from many lands, BE SAFE. Cook 'em, eat' em, REFRIGERATE 'EM.
