Making pickles is now much simpler with this home fermenting kit. The Perfect Pickler® Jar Top Fermentor System (JTFS) makes small batch recipes using a variety of herbs and spices - both traditional and the latest artisanal wonders. The JTFS threads onto a variety of wide mouth canning jars - five different size jars from 1/2 pint to 1/2 gallon. Watch the bubbly fun inside the jar as veggies transform into pickles. After fermenting is complete - in just a few days - thread on a standard canning lid and refrigerate. That's it! There is no cooking or boiling, no added culture starters required; just salt, water, the recipe and your jar. This style of pickling is timeless, known as brine or lacto-fermentation to produce probiotic-rich pickles. The recipe ingredients are placed in a light saltwater solution. The kit quickly attaches and seals out air, but allows gases to escape during fermentation. Another big plus, no fermenting odors! The kit includes a four-part lid assembly, 1/4 pound premium Celtic Sea Salt®, our cook booklet with oodles of signature recipes, and our new DVD to introduce you to the world of lacto-fermentation with extra video recipes. I was excited to try this as soon as I heard about it. I grow a large crop of different types of hot peppers every year and enjoy pickling them to eat "as-is", and also to mix with vinegar, salt and spices and the blend up to make hot sauce (like Tapatio, Cholula, Tobasco, etc). When I got the pickler, I realized that it was simply an airlock with a large mouth mason jar lid and rubber gasket. It does work as well as it says it does, but save your money. Buy a 3-pack of homebrew airlocks for five bucks and some small rubber bungs. Drill an appropriately sized hole in your lid, insert the bung and airlock, let mother nature work her magic and buy a six-pack with the 12 bucks you just saved. The Perfect Pickler comes with a recipe booklet that is useful for a first-timer, but there's nothing that can't be found for free on the internet.

Words are just tumbling over themselves in my head because I don't know just how exactly to tell you how very excited I am to find this little, simple gadget! OMG! It truly is so easy, so fun, and so FAST, and so affordable, it's practically ridiculous!

We're all learning how important it is to eat fermented, cultured, probiotic foods (and beverages) and how healthy it is..about the importance of eating raw (organic) vegetables and getting a good variety every day, well here's the SOLUTION!

I know I probably sound like an infomercial, but I can't help it. If I could quit my job and make a living selling and demo-ing these, I would - seriously.

You simply make a brine of celtic or himalayan salt water; fill a canning jar with whatever you would like (they give you some starter recipes) and pour the water over it. Put the lid on, and sit in a cool, room-temperature area for 4 days. That's it! And four days later, I had pickled veggies that were so delicious that I ate the whole quart in one day!

This is perfect to do with kids - your kids or grandkids; or as a school project together. A great way for children to be involved in a simple and creative activity that brings much reward.
It's fun, fast and healthy. It makes a great snack to have on hand in the fridge and makes the dollar stretch (which we all need right now) and will keep a long time in the fridge.

Check out the gallery (99..) on the Perfect Pickler website as the ideas are endless. When you use the probiotic vegetables to put into another recipe, you have just increased the health benefits of that recipe!

As I seriously would like to get probably 10 more, I'm glad to know that they have bulk pricing as well. They also have a great Facebook page with wonderful ideas and info. This is what everyone is getting for Christmas gifts for sure!

My first time pickling is a success! I followed the directions with the basic kit and used just the Celtic sea salt and water, along with a mixture of about six different organic vegetables. The resulting tastes and textures vary somewhat, but it's all interesting (cucumbers and cabbage taste the best so far.). I found a spot that stays between sixty five and seventy degrees and let it brine for about twelve days. I now realize I must have absent-mindedly used chlorinated tap water, because my jug of filtered water (real cheap in grocery stores) was not opened. I just now used that filtered water for a new batch and hope that will shorten the fermentation time, and plan to further tweak this for accuracy. I may even try using other good salts, like pink salt. I started doing this for its great health benefits (compared to almost all commercially "pickled" products, which are dead foods) but am surprised by how much I like the taste!

Some reviewers said that they could get the components of this kit more cheaply elsewhere. I have used gas locks and know it it true.

But

Here is a very convenient kit that a) is really not expensive, b) has all you need to get started in home pickling (except bottle and ingredients!), and c) even has the hole in the lid! It also has a booklet with starter tips and recipes.

Mine has already been used in three brine pickling projects and has been an excellent investment.

This is really just a small plastic fermentation lock that fits into a mason jar lid. It's fine, and it works, but it should be priced around $5. It comes with a package of special salt, but any salt (preferably non-iodized) will work. Fun, but on the expensive side for plastic.
