About the Author

Catherine Atkinson has always had a passionate interest in food and cooking and as a student this culminated in a BSc (Hons) in Home Economics at Surrey University. After graduating she worked in various hotels and restaurants including the Roux Brothers' famous patisscries. Her catering experience led to work in publishing - creating recipes and styling food for photography - and she became Deputy Cookery Editor on Woman's Weekly and later Me magazine. Maggie Mayhew is a full-time food writer and home economist, contributing features to many national women's magazines. Before becoming a full-time writer and author, she was Deputy Food and Wine Editor of Living magazine for five years.

The section on sealing the jars is woefully inadequate. The first recipe I tried (dill pickles), I just put the lid on, as was said in the recipe, and then a few days later, the contents started expanding in the jars and leaking the brine. I was very upset because the ingredients had been expensive to buy and it was all wasted. This was the first time I had attempted a pickle recipe.

I searched online to see if I had done something wrong, and it appears that the sealing process is quite extensive, none of which is mentioned in this book. As a result, I would recommend that you use the recipes as a guideline, but definitely don't rely on the book when it comes to sealing the jars, as there's nothing apart from a one-sentence description about the two types of lids available for jars. Sealing is a hugely important step because the prepared food is supposed to last several months (some up to years) but the author didn't provide the final step in this recipe process.

Very disappointing!
