Lots of really great recipes that actually work. I have tried many of the recipes in this book and all of them have turned out very well. Lots of good pictures and tips . I plan to bake my way right through this book.

Lots of classic recipes, December 27, 2009
This review is from: Perfect Pies: OVER 180 SWEET AND SAVORY PIES (Paperback)
I like that there are recipes for fruit tarts and galettes. I've tried the Pat-in-the-Pan crust for my cherry tarts and it's turned out excellent without having to chill anything. I'm sure you can find variations of this "pate sucree" online for free but having it all in a book is nice.
There is a "Pick-A-Crust" Pie Wheel and several charts in the book that tells you which crust is best for which kind of sweet/savory fillings. These few pages are worth the price of the book alone. None of the recipes are overly fussy and that's what makes it appealing to me and can be done in one short session.
Recipes include meat pies, country quiches, french tarts, picnic pies, chocolate cream pies, custard and lemon pies, fruit and pudding pies. Includes a small sampling of slump, crisp, pandowdy, cobbler, croustade, galette, clafouti and mincemeat.
