Part of what makes cooking shows or open-air restaurant kitchens fun is that professional chefs do a lot of showy flipping of food as they're cooking. It looks tricky, but really the only trick is having a sturdy well-seasoned or nonstick pan that's got gently curved edges. The Persona Professional 12-inch skillet is that kind of pan. Whether it's used for sauteing a batch of veggies, flipping omelets or reducing pan juices for a sauce or gravy, this rugged, handsome pan can be of daily use. The pan's nonstick finish was designed for cooking over low to medium heat, great for omelettes or even large crepes; this is not a pan for roasting or broiling.
