Part of what makes cooking shows or open-air restaurant kitchens fun is that professional chefs do a lot of showy flipping of food as they're cooking. It looks tricky, but really the only trick is having a sturdy well-seasoned or nonstick pan that's got gently curved edges. The Persona Professional 12-inch skillet is that kind of pan. Whether it's used for sauteing a batch of veggies, flipping omelets or reducing pan juices for a sauce or gravy, this rugged, handsome pan can be of daily use. (Not to mention it would look great hanging on the pot rack, with its black enameled finish and high-polish steel handle!)

The pan's nonstick finish was designed for cooking over low to medium heat, great for omelettes or even large crepes; this is not a pan for roasting or broiling. It is, however, safe to put into a low-temperature oven for keeping food warm. Before cooking with this pan, wash it with soap and hot water. The first time it's used for cooking, wipe it with cooking oil; after that, fats and oils are optional, making it perfect for people who are trying to cook more healthfully.

The Persona Wearever pan should be cleaned with a sponge or soft cloth--no abrasives. It is dishwasher-safe. The skillet has a 12-inch diameter; the handle is 9 inches long. Every kitchen and chef needs a non-stick frying pan. This is a good one to start with. It is kind of big for cooking a couple eggs, but with practice you will be making beautiful over easy eggs and omelets. Also, its size allows you to accommodate cooking larger dishes of potatoes, chicken, or whatever you want to fry, with minimal use of an oil product. My pan stays on the stove and rarely gets put away. Be warned, this is not a cast iron skillet. Do not use any steel spatulas or spoons with this pan. Always stir and remove food with a wooden spoon or rubber spatula. Better yet, learn to flip the food and don't use a utensil at all.

The trick to learning how to flip food in a non-stick pan is to practice with a piece of dry toast. Place a piece of toast in the pan and flick your wrist just enough to push the toast against the pan edge furthest way from you. As the toast lifts off the pan push your hand slightly forward to make sure the toast lands in the pan. Don't try to bounce or toss the toast in the air. Getting airborne is not the idea. You want a smooth rolling motion of the food item. With a little practice you can roll the toast off the pan edge over and over. From there, move to a fried egg or diced potatoes. Do not attempt to flip food with cooking oil or drippings, you will be guaranteed burns on your arm, or a possible kitchen fire. This pan was designed to be used dry, but I generally use a tsp of butter when frying eggs, and a little olive oil when frying potatoes.

This frying pan is the best one I have ever owned. I've had it for almost a year and it is excellent. The non-stick coating is superb. I just love this pan. Other pans I've purchased in the past have rusted on me in no time. This pan gets an A++++. It's a great buy!!!

I loved this pan when I first got it. I'd call it a disposable pan, since after a few years, the non stick coating is rubbing off and it needs to be replaced. I love the size though and wish it would have lasted longer. So, if you don't mind replacing your pans every few years, this is the pan for you. If you want a high quality pan that lasts and lasts, keep looking.
