Also steel, the round ball nut on top of each mill unscrews the dome for filling with peppercorns and salt. Differing from other models, the Chateauneuf offers a U-Select feature, which designates six settings on the lower steel band of the pepper mill for precision grinding ranging from coarse to fine, and three settings on the salt mill. The other main difference between the salt and pepper mills lies in the grinding mechanism itself. Peugeot pepper mills use case-hardened-steel grinding heads with two sizes of grooves; the larger grooves crack the peppercorns in half and direct them into the smaller grooves, which grind them much more finely than most mills. The grinding mechanism in Peugeot salt mills is purposefully constructed with 18/10 stainless-steel, which won't corrode from prolonged contact with the salt.

Chateauneuf pepper and salt mills come in two sizes, 9 or 11-3/4 inches, and in several finishes, including matte black, matte red, and cherry. Care for a mill is easy: clean the exterior and inner chamber with a damp cloth; never immerse in water; avoid putting salt in the pepper mill, or grinding green or pink peppercorns by themselves (mixed with black is fine); and avoid damp types of salt (usually pink or gray) in the regular salt mill. History of Peugeot

It's All About the Mechanism

The primary difference between Peugeot and all other brands are the spice-specific mechanisms. Peugeot has 7 unique spice specific mechanisms for pepper, salt, herbs and spices, coffee, wet salt, chili peppers and nutmeg. For each spice, there is one - and only one - Peugeot grinding mechanism, each made of the ideal design and constructed from the best material available for its intended use. Pepper Grinding Mechanism

Peugeot's Pepper Grinding Mechanism is a two stage burr-style system. During production, the helix-shaped grooves and grinding teeth of the pepper mechanism are individually cut before the steel is case hardened to make it virtually indestructible. The mechanism is then given a proprietary treatment to provide additional protection against corrosion. During use, the helix- shaped grooves guide whole peppercorns through the mechanism to crack, then grind to a consistent size by a double row of teeth. This process releases the pepper's essential oils, resulting in more flavor and aroma for your dish. This patented mechanism is found on every Peugeot Pepper mill and is widely considered the best pepper mechanism available

Beyond personal preferences, different stages of the preparation / cooking process and different dishes often call for seasonings of varying sizes. Peugeot now offers the ability to quickly, easily and accurately adjust the grind settings with its patented u'Select system.

From coarsely ground pepper or salt to very fine, u'Select offers:

-6 pre-defined levels of grind for pepper, or any point in between.

Fine or coarse grind-is it just a question of taste?

Actually it depends on personal taste and the dish being prepared. While personal taste plays a role, some dishes call for coarse salt or pepper, whereas others require either or both to be finely ground. A finer grind will be used for a delicate sauce or mixed raw vegetables and a coarse grind for grilling a steak or when making heartier meats and dishes.

Which pepper and which salt can be used in Peugeot Mills?

Pepper:

To get the best results, we recommend you to use only dry, hard, whole peppercorns that are 5 mm (1/4") or less in diameter. Black, white and dry green peppercorns can be ground in Peugeot pepper mills. Pink peppercorns can be ground only if in a blend (max 15% pink) with one of these other peppercorns. Dried coriander seeds are also suitable for the pepper mechanism.

Salt:

To get the best out of your Peugeot salt grinding mechanism, you should use: dry salt, ideally with a diameter of 4 mm (0.16") such as coarse sea salt or rock salt (salt mined from an underground salt seam). Do not use your Peugeot salt mill for grinding pepper or any other spice, or damp sea salt (also known as grey salt, Guerande, Re, etc.) The moisture content is so high in damp salt that it will corrode the mill. Use a Peugeot Wet Salt mill with a mechanism specifically designed for damp salt. Its shape and materials have been designed to resist salt corrosion.

It's amazing how much time and energy one can spend on something so seemingly inconsequential as finding a proper pepper grinder while the vast majority of those on the planet are simply hoping to put a bowl of rice on their table each day. At any rate (and deftly shoving all guilt aside), I shopped around and tested out just about every mill available and this one is perfection. The six grinding options are distinctly different allowing you to choose the grind that works best for whatever your culinary situation demands. I'll stop short of saying that this pepper mill has changed my life (just short) and will simply opine that it's the best pepper mill I've ever encountered. Worth every penny. Great wedding gift, too.

UPDATE: Oct., '13: Dropped a star--- maybe should have dropped 2. I have two of these mills and they worked, as I previously described, for a couple of years. Then, they both seemed to bind up and wouldn't allow me to change the grind setting. Frustrated, I called the warranty service folks and spoke with a rep. She led me through an easy process to determine whether or not they were actually broken or just needed the mechanisms to be freed up. Well, it worked. Both mills are now working correctly. BUT, as mentioned by other reviewers, the knob on top needs to be adjusted properly---not too tight---when changing to a different grind setting. So, my expensive mills end up being a bit temperamental.

Have had this for over 2 years now, and it's been a constant battle.

The screw at the top that holds the cap on also can cause the grind to vary when it comes loose, which it often does when grinding.
The Peugeot grinding mechanism is fine, the problem is the way the mechanism is held in position because of its inherent design. Tightening the top screw simply pulls the machine up and results in a very fine grind even when set at the max size.
A simple cure would be a positive shoulder for the shaft to pull up against, giving a secure and consistent positioning of the two grinding surfaces relative to each other. As it is, they vary all over the place, and it's been like this since day one. Should have returned it.

It gives an inconsistent grind, and the volume output is pathetic.

Not only would I not recommend this thing.....if anyone loves 'em, I'll sell you mine.

This mill is exactly what I have been looking for. It works flawlessly, since the screw nob on top is not used to adjust the grind size you can keep it tight so it does not move when you use the mill. The variable grind sizes provide plenty of versitility. It has a nice substantial wieght and size and grinds with little effort.

I second all the rave reviews (though, c'mon folks, it's a *pepper mill*): this is a great product, solidly built, and with a variable grind whose mechanism does *not* depend on the tightness of the screwtop.

But -- and this is a huge "but" -- the last point is true *only if you get one that works.* I say that from experience. The first one I bought would produce some pepper, but I'd have to tighten the screw in order to refine the grind; in other words, the gradations on the mill itself weren't really working. So after a couple of weeks of trying and fiddling around (e.g., cleaning the inside and the bottom), I brought it back and got a new one in exchange. Voila. This one works as advertised.

The one- and two-star reviewers are simply using defective products. Return 'em.

I do like this pepper mill, and I use it every day with dinner. It's good looking, too, in a classic way. But it's really pretty expensive, and so I'm deducting a star for the value. There are cheaper mills out there that may not be as fancy looking or have six gradations in grind, but they're a heck of a lot cheaper. So it's a luxury item. But hey, I bought one. And ultimately, now that I have one that works, I'm glad that I did.

I bought this pepper mill based on great reviews on this site. What a mistake! I have only had it for 6 months and I am on today looking for a replacement. It looks great, but I have to bang and shake it to get much pepper out at all on any setting. Maybe I got a lemon but I cook a lot and I can't imagine a worse pepper mill. I wouldn't give it away.

My husband bought this for me as a gift and it's wonderful. I had been looking for years for the perfect mill, and this is it. I love pepper, and this mill makes it even better - pepper has never tasted so good. And I can get a huge amount out with little effort, so I am in pepper heaven. The settings offer enough range. The matte black is really nice. The design is very comfortable to use and hold. (The negative reviews must have been lemons - I can't imagine mine performing the way that has been described by others.)

We have both the Pepper and the Salt Mill. This is an amazing mill. The difference between grinds is quite large which makes this very versatile for cooking and eating.

I loved this pepper mill when I first got it; however, after about 6 months of use I could no longer switch the grinding mechanism. It now takes so much effort to get the smallest amount of pepper and will only grind the pepper ultra fine.
