Product Description

Paul searched for two years to find the right producer to craft a preservative-and-additive-free collection of spreads, pestos and olives bearing the A.G. Ferrari Foods name. His search ended in the vegetable gardens of a small producer in the herb-scented Ligurian hills above Genova.

The Taggiasca olive is native to the aromatic groves of Liguria, beloved by local olive oil producers for it's pleasing sweetness and clean fruity palate.

These fruity olives are packed without additives in extra virgin olive oil and are perfect for snacking or for use in any recipe calling for olives.

I became addicted to these wonderful little olives while living in the Netherlands for ten years. I bought them by the gallon. Unfortunately, they are not cheap or easy to find in the USA, so I was thrilled to find an outlet that sold them in pitted form, though I would have accepted anything. Once you eat them, you will not touch any other kind of black olive. The Taggiasca Olives from Liguria are the only black olives in the world that are not dyed to make them black. It's one of those things that I don't care what they cost, I have to have them in my panty at all times. Good luck staying away from them, once you've had a taste.

Hmm, the jar says to refrigerate after opening, but the olives are in such a heavy concentration of oil (not the vinegar-ish liquid of other olives) that the liquid congeals into this yellowish paste. They taste greasy and look really strange now. Before I put them in the fridge, they were very good. I love this type of olive when it's been roasted, like on bruschetta.
