Dee McCaffrey is an organic chemist and nutritionist who lost 100 pounds and has kept the weight off for over 20 years. Her passion lies in teaching others how to shop, cook, and eat healthfully, while serving as a role model and inspiration for sustainable weight loss and healthy living. Woven throughout her books, videos, seminars, cooking classes, and food products, is a personal message of hope, empowerment, and courage for making lasting lifestyle changes.

Dee earned her Bachelor of Science degree in Environmental Chemistry from San Jose State University. During her 19-year career as an organic analytical chemist, she became intimately familiar with the chemical names and toxic properties of the majority of common environmental pollutants, particularly those used in and on America's food supply. She made the connection that pesticides, preservatives, flavorings, colorings, and refined carbohydrates affect body chemistry in such a way that balanced health is difficult to sustain. It was this understanding that led to her dramatic transformation.

During and after her weight loss, Dee spent countless hours researching the most effective and balanced path to optimal health. She also spent a great deal of time in the kitchen creating healthier versions of her favorite comfort foods.

In 2000, she returned to the classroom to become formally trained in nutrition education at Bauman College. Since then, Dee has become a trailblazer, coining the term "processed-free" to describe her nutrition philosophy of moving away from processed foods to eating foods in their closest-to-natural form. Her private nutrition counseling practice specializes in personalized diet counseling to help clients find the right nutritional balance for their health goals and lifestyle.

Her books Plan-D: The Amazing Anti-Diet That Will Change Your Life Forever and the accompanying Plan-D Cookbook: Flourless and Sugarless Cuisine, and now The Science of Skinny have sold in the U.S., Canada, and overseas, helping thousands of people to change their approach to food, eating and balanced health.

Dee frequently conducts live webinars, teleclasses,lectures and cooking classes. Dee's weight loss story, books, and recipes have been featured in local and national print, including Quick and Simple Magazine and Obesity Help Magazine. She appears regularly on network and cable television, and has been a guest on radio shows throughout the United States and Canada.

She is the co-owner and president of Dee's Naturals, a brand of "processed-free" food products including flourless oat bran muffins, whole grain tortillas, and flourless gluten-free cookies sold in natural food markets. Dee and her husband Michael McCaffrey are the founders of Processed-Free America, a non-profit organization dedicated to eliminating childhood and adult obesity through nutrition education and advocacy.

If you loved Dee's Mighty Cookbook and wished for more, this is what you were wishing for. Plan-D contains a more thorough presentation of the contents of Dee's extensive knowledge on nutrition, her healthy eating plan for a healthy lifestyle and weight loss as well as 40 new recipes.

I highly recommend this way of eating. You will be amazed at how satisfied you are and how great you feel. HOWEVER, be aware this diet is for folks who either have time and/or love to cook, because you will have to take time to do more food prep. In today's rushed world, many will find this lifestyle out of reach. For those that want to eat healthy and need a more simple plan, I recommendJoy's LIFE Diet: Four Steps to Thin Forever. Dee's plan includes a lot more healthy fats and is more satisfying, but may be out of reach timewise for the average American household.

My one disappointment with the book, is that Dee finally explains how she has been influenced by psychic Edgar Cayce. I did some research on him and while he may have come up with some healthy guidelines, he also is considered the Father of the New Age movement by many. Some of his (and thus) her dietary restrictions are based on his "revelations," rather than scientific evidence, hence she nixes pork. So do read the book carefully. Take and apply what is based on science and don't get drawn into the religious aspect.

Dee's book combines the science of nutrition and good common sense to create a plan that is easy to follow. I have been following Dee's guide for 4 months. I have not been hungry, I am losing weight and my cholesterol is down 20 points! I have so much more energy. The recipes are a big hit in my family and I am enjoying both eating and cooking. The addition of healthy fats gives back the flavor I have missed trying to follow low-fat, low carb diets. I feel like I am eating to fuel my body and achieving balance. Thanks to Dee.

This book makes you realize why it is so important to be eating the right foods. For years I have heard "eat your fruits, eat your veggies, stay away from processed foods" but this book really details why we MUST be doing this. This is the science behind the healthy eating speeches. You will not want to eat all that processed junk again and learn to be more selective about what goes in your body. I have 3 young children and her book has made me feel like I can do the best for them by giving them real food, not the processed stuff.
Best of all...the recipes are so delicious. Just made the Black Bean Soup for my kids this week and they LOVED IT! I'll be doubling that one next time! Fantastic job, Dee!

I have struggled with my weight for the past 20 years, yo-yoing up and down +/- 30 lbs. I had success with Weight Watchers, but after reaching my goal weight, I slipped back into old habits and the weight gradually came back.

Then I met Dee at a cooking class and the things she said about nutrition and avoiding processed foods made so much sense to me. I had no idea that some of the foods that I thought were natural and healthy were actually processed and bad for me. Read this book and you will be SHOCKED too! I bought her book and I've been following the recommendations Dee makes for 6 months now and my life has changed for the better:
- I'm at my goal weight and am having no trouble maintaining it
- I feel better: more energy, more alert, less tired
- I'm not depriving myself of anything I want to eat
- I'm not dieting, I've just made a permanent change to the types of food I eat
- I'm not catching the seasonal colds I always used to catch from people at work
- My borderline high blood pressure is in the normal range for the first time in over 20 years

If you have problems with your weight or simply don't feel that you are in optimal health, I cannot recommend this book highly enough. I've also given copies of Plan-D and it's cookbook companion to family and friends - it's a gift of good health for those who want to live a better life.

My bookshelves are lined with diet books. This book is terrific because it discusses the merits of lemon water in the morning, apple cider vinegar and keeping your body on the alkaline side. I did some research on the internet to find out about the alkaline advantages, but needed better guidelines on exactly "how" to plan such a diet. Like most books, you select what interests you. Like most diets, you choose. In the end, this book has provided information lacking in the rest of my library on diet. Nice read.

Dee McCaffrey presents a science-based, research-solid explanation of why processed-free foods are best, and the multitude of ways one can benefit from following the nutrition schematics of Plan-D.

Plan-D's premise is simple: eat foods that are closest to their original form, and approach eating as intelligently as the foods themselves have been designed by nature.

Among the many important nutritional facts she covers in this book, McCaffrey explains how transmuting sugar through science has created unnatural substances that our bodies simply do not know how to handle appropriately. She also provides a clear explanation of how the chemical processing of many foods destroys their nutrient contents, and how the myth of the benefits of fat-free foods are depreciating our quality of life.

Without a doubt, it's clear to anyone who knows the story of the politics and policies of the food industry as to why foods are processed. McCaffrey presents facts to explain why food manufacturers routinely remove the health benefits of our foods. The food industry, like any market, seeks to be the architect of our eating habits in order to secure its bottom line - reading Plan-D has convinced me that it's up to the consumer to become educated about what foods to eat and how to prepare them so that we remove ourselves from the influences of an eating culture driven by incomplete, duplicitous nutritional information on boxes and lobbyist-driven dietary guidelines.

Plan-D is written by a scientist, but can be approached by any regular person. McCaffrey takes the time to break-down the hard science into words we can all comprehend. Using her own hard-won experiences, she gives us relatable stories of her (and others') successes, and outlines Plan-D in simple grids that are easy to understand and implement.

Find processed-freedom. Read this book.
