Got this one for canning, but I've expanded to using it for pasteurizing egg whites for buttercream as well. The thermometer has a sliding clip on the back so you just stick it on the pot, slide it to the height you want and you're good to go. The thermometer bulb is suspended a couple mm from the bottom of the metal plate, so you can push it against the bottom of the pan and not worry about blowing the bulb with direct heat. It also has handy markings which tick off the various candy states if that's what you want it for. Cleaning is a breeze since I just toss it in the dishwasher.

I almost feel guilty not giving this 5 stars since it is a well made product that does what it is supposed to. The reason I don't is the way it is designed it has to be in relatively deep liquid. It is very bulky and has a tab at the end that requires at least an inch and a half of liquid. I prefer the type that will sit pretty close to the bottom of the pan. Don't hesitate to purchase this - it has good build quality and is rugged - just know it is designed more for large deep pots.

I use this when I make yogurt and the temperature of the milk is critical. It works perfectly and the clip on the back keeps it attached to the side of the pan securely. I like that it has a metal piece under the ball on the bottom preventing it from touching the pan and giving a false reading.

We bought this Polder Candy/Jelly/Deep Fry Thermometer 2 years ago for maple syrup processing. We have used the thermometer twice for maple syrup making and twice for making Christmas candy. The most recent usage resulted in our overheating our maple syrup. AFTER that problem, we calibrated the thermometer and found that it was running 12 degrees (Fahrenheit) LOWER than it should.

It was surprising, because there was NO apparent damage or change to the thermometer. Really disappointed, we thought we'd found a good thermometer.

I purchased for making caramel sauce (which I do regularly). My goal temp is 350 degrees. This thermometer registered 335 and the caramel all burned badly. (The truly annoying thing was that I KNEW it was burning and yet my faith in the thermometer was great enough for me to second guess myself and let it happen.) I then tested it and two other gauges by boiling water. It was dead on at 212 degrees. I did another batch of caramel and my ancient, cheapo guage and my termapen matched (and kept anything from burning), this one was once again way too low.

The wide frame made it a little less secure in a smaller pot (where I tested the water). In my larger pot (for caramel use), it held well. If it had been accurate, I would have been pleased with it. I've already printed my return forms...

I started making hardy candy to past out as a little something extra for Chritmas gifts and I need a thermometer to make my hard candy. Apparently making hard candy you need to pull the mixture from the heat at 300 degrees. Well it must be pretty acturate because the candy I made this weekend turned out great and the family at home is enjoying it so much that I have to make more for Christmas.

Nice features of this thermometer was that it was very easy to clean the surgar off, the clip in the back helps hold the thermometer up, plus the little bar at the bottle that helps keep the thermometer off the bottom of the pan.

Great product and well made. I probably won't have to order another one for about another 20 years.

This is probably more industrial than I need for making holiday candy, but it works great and is easy to clean (dishwasher safe!!).
My only dislike is that it's so tall, I can't clip it to the sauce pans I use for most of my baking. It's really made for use with big (taller) pots. Not hard to hold or lean against side of pan, though, so still useful to me. I needed one with clear markings (i.e. 300 degrees = "hard crack" stage for candy), which this one has. Easy to read, very sturdy and accurate.
