All I can say is awesome...I originally saw the smoking gun after going to a bar in Manchester, England, called the Alchemist...they had a drink on the menu called the smoky ol' fashioned (and there are cool videos on youtube on how to make the drink)...best infused bourbon i've ever had, and had to get the gun when I got home...One of the best investments ever!!! Recreated the drink and very happy!!! Also, have been smoking burgers before putting them on the grill...awesome!!! The Camerons Smoking chips works well with the gun...i got the 8 pack (pints) for like $28, and it should last a long time!!!

This is a lovely device, but I will not wax eloquent about the uses to which I have put it because other reviewers seem to have been more adept and imaginative than I--not unexpected for a man less than a genius in the kitchen. Suffice it to say that I have smoked almonds, cheese, sea salt, and a couple other things, with good success.

Where I will add a kudo is for the company behind the product. My Smoking Gun came with a faulty switch: sometimes the fan did not come on, other times it would, and I thought it was simply a matter of weak (?) batteries or smutz on the terminals. But no: the switch eventually failed completely about three days after the warranty expired.

Nevertheless, I called the company and talked to a nice gentleman who cut me some slack: they would send me a new one and a box to return the old one. The new one works perfectly. They went the extra mile for me, that's worth a lot, and I'd like to point that out in public. Nicely done, PolyScience, and thanks.

We followed the instructions and all the videos exactly, but it made everything smell and taste like it was in a fire sale. I've smoked meat outside on the grill and know the wonderful scent and taste of real smoked food. This product doesn't come close. It either does nothing (if you smoke meat before you cook it) or it makes it smell and taste like an ashtray. I'm suspicious of all the positive reviews here because it is pretty obvious (also check out the reviews on Williams Sonoma's website). We did several tests including a scientific taste test on bacon - compared pre-cooked-smoked, post-cooked-smoked and un-smoked. The effect was either very subtle (pre-cooked) or ashtray/fire-sale (post-cooked).

1) He has trouble keeping the device lit
2) He has to smoke the food twice
3) It still comes out "too subtle" - his own words
4) There is no point in using it to smoke food prior to cooking - his words
5) He mentions that "fresh" smoke is important because "stale" smoke will make the food taste "like an ashtray" - his words
6) Smoke escapes from the container into the kitchen (a problem noted by several reviewers here and at WS)

All in all, it seemed like a clever idea. I really wanted it to work, but it just doesn't. I'll go back to either using a real smoker, liquid smoke or smoked salt and smoked paprika to get the taste I'm after. It does do a great job of stinking up the kitchen and your clothes. Plus charging $20 for tiny jars of wood chips is a total ripoff. I guess the whole thing is just smoke and mirrors.

The smoking gun gives a great smoke flavor to foods without the acrid ash. It does put a lot of smoke into the kitchen, but it dissipates quickly enough. It is primarily for cold smoking, but I have also used it on a chunk of cured salmon which i then put into my Chambers thermowell at 125F for several hours. The end result was like sous vide, but smoked, super tender and cooked, but not enough to have brought the white albumen to the top. Unbelievably delicious. I have used to to make smoked salt, butter, cheese, salmon, hummus (also adding in whole cumin and coriander seeds to the wood mix), duck breast and a cumin-sour cream sauce for roasted sweet potatoes. Oh, and homemade bacon from cured pork belly! The smoke is strongest when it can be whirred into a liquid, but it also works quite well on solids placed in my Dutch oven or homemade tin-foil-tray bacon smoker. If you have large wood chips, try chopping them down in your coffee / spice grinder. The chips from polyscience are pricey. Customer support is great - i received mine without the screens and their customer support sent them to me promptly.

Picked this up a couple weeks ago. Several other chefs I know use it, and I picked one up looking for a quick and easy way to smoke small amounts of food. I've used it a handful of times (including doing 3 dozen wings for the Super Bowl, and 6 pork chops earlier tonight). Works excellent for these. I wouldn't try to smoke a whole brisket or anything, though.

Very easy to use and to maintain. Definitely recommend it.

Was skeptical that this would add smoke flavor to food but it does once you get the hang of it
There's definitely a learning curve with this. Best lessons we learned were 1) do your smoking under the range hood with the exhaust fan on high, 2) once the baggie that you have the food in fills with smoke take the hose out, if you leave the hose in it keep pumping and blows the smoke out, 3) you can use other things besides the wood chips. We used dried herbs (dill and then rosemary) to smoke cheese. Absolutely yummy. I would definitely recommend this to the home cook looking to add a new dimension to their food.
