An unexpected gem.,

With turkey taking up the oven this thanksgiving I tried the "Yogurt Zucchini with Onion" recipe and was amazed with the simplicity of the process. I found it nice to be able to put something together and forget about it for a while. By cooking the dish in my toaster-oven (which usually sits unused) I had time to vacuum and straighten up the living room before my guests arrived - without having to stand over the stove and stir. Further, the baking made the dish extra flavorful and healthy. I'm planning on freeing my toaster oven from bagel-boredom and venturing on to some more recipes...

I have found this book to have tremendous recipes, and most are low fat. Everything I have tried works to perfection. My only complaint, is the pan sizes are not real. Like many recipes call for an 81/2x81/2x4 one quart dish. There is no such dish.

I like this book because it gave me some great ideas on what to do with my toaster oven, and there are many different things I can do with it, that I hadn't thought about. I will probably not make the low fat versions of many of the recipes, since that isn't the way we eat, but there are some terrific ideas in here. I like it that she shows us what is possible with the toaster oven and how to get the results you want. It has made me value my new "toy" more than ever. There are some recipes that I will make as is; the main dishes and sides look good to me, and there were several that I thought sounded excellent. We don't eat a lot of desserts, so that section didn't interest me, especially since it was low fat. We stopped dieting and started eating healthfully, watching portion sizes and eating a variety of foods. The weight comes off if you are intelligent and thoughtful about your choices. You can eat anything you want, within reason. You don't need to do low fat or low carb or any other low thing out there! All in all, a handy little book, and a good resource. I am also buying a cookbook for convecton cooking since my toaster oven has a nice convection feature, and this book really didn't go into that.

great cookbook,

This cookbook was given to me as a gift with a new toaster oven. I have tried several of the recipes (such as a pesto baked chicken, baked eggs, and a few others) and found them quite good. I'm most impressed with the focus on fresh, healthy (non-processed) ingredients, which isn't always the case in a cookbook geared towards convenience. Since this is my first toaster oven, I also appreciate the tips at the beginning of the cookbook for cooking in a small oven, including suggested times and temperatures for many common foods. It's a great resource.

I hate to be negative, but this book didn't have the kind of recipes I was looking for at all. I was hoping for more home cooking type food, like casseroles....chicken spaghetti, green bean casserole; recipes that are tasty and cut down in quantity for a toaster oven. The recipes in this cookbook were mostly low fat and they were for 4 or more people. Generally, when cooking in a toaster oven, most people are cooking for themselves and maybe a spouse. I generally cook for myself and my husband, so I didn't want recipes I would cook when feeding 4 or more people. I am perfectly capable of doing the math and breaking the recipes down, but if I have to do that, I could just use one of the many regular cookbooks I have. This cookbook needs to be listed as a low fat/diet cookbook. It is full of lowfat recipes....even the desert section is lowfat recipes. If I was looking for diet recipes, I would've bought that type of cookbook. My husband and I didn't find any recipes in this book that interested either of us!

The breakfast section of this book is inspiring. The downside is no pictures in this book at all.

This book is perfect.
The recipes are concise, have many to choose from and always are developed with your health in mind. The author also shares some insight to how, where and when the recipes were created. Congratulations Lois on a wonderful book!

This cookbook is great. So far all the recipes have turned out really good and were easy to make.
The only problem I have had is trying to figure out how the oven rack should be placed for each recipe so it cooks properly. So far I have figured it out mostly but it would be easier if the recipes suggested the best oven rack position for cooking. The toaster oven experience is very new for me and my family and we never owned one growing up so I am a new user and could use all the help I can get. I love the little tips and suggestions in the book too. I purchased this with my toaster oven b/c of all the great reviews. I am so glad I got it. It is wonderful.

Weirdly obsessed with eliminating fat,

This maybe should have been advertised as a Susan Powder-esque eliminate all traces of fat from your diet cookbook. Squeezing your cooked dinner between paper towels to eliminate all vestiges of fat?!? Really?!? Every recipe with dairy uses non-fat yogurt and fat free half and half instead of whatever dairy product would ordinarily be used, and EVERY recipe lectures on all the ways you can take out every last smidge of fat. The author comes across as having an eating disorder, and the recipes are weird as a result. Some of them I can't even imagine working (for example, making split pea soup with split peas that you grind to a powder in your blender and bake with no liquid at all for an hour!). I bought this book because I'm currently without an oven and am committed to cooking fresh, from scratch food, and was looking for some ideas to stretch out from what I've been making in my toaster oven so far. I can't honestly see making any of these recipes.
