Although Phillips uses the term "pot pie" loosely, her ideas are creative and the instructions are easy to follow. Also, many of the steps can be made ahead and refrigerated, and then you can put the dish together when you're ready. I've only made two of the recipes so far, but both were excellent. Old-Fashioned Chicken Pot Pie with Chive Mashed Potato Crust...

I am an avid cook and cookbook collector and this is one of the worst cookbooks I have ever purchased. The author must not have tested the recipes. The stews are like water, the Monte Cristo makes enough liquid to flood a bathtub and, if you follow the directions, the thing never firms up. All in all, I tried five different recipes and ended up throwing the cookbook away,...

Although Phillips uses the term "pot pie" loosely, her ideas are creative and the instructions are easy to follow. Also, many of the steps can be made ahead and refrigerated, and then you can put the dish together when you're ready. I've only made two of the recipes so far, but both were excellent. Old-Fashioned Chicken Pot Pie with Chive Mashed Potato Crust was outstanding, pleasing even my conservative father (he declared it "luscious"), and Goat Cheese and Tomato Pie is actually a wonderful focaccia--even my 8-year-old liked it. I'm looking forward to trying a sort of Asian stir-fry that you top with a noodle pancake. This book combines old friends with new adventures--great fun!

Diane Phillips's Pot Pies are the perfect solution to comfort food that is new and different - and at the same time very familiar and comforting. If you ever get a chance to attend a cooking class with her, DO IT! In addition to observing how easily the recipes go together and tasting how wonderful they are, you'll get tons of variations on each recipe's theme. Like "The Perfect Mix," I know this cookbook will become a standard in my kitchen.

I gave this cookbook to my husband for Christmas. We have made about 5 of the pot pies so far and every one of them has been a hit with our family. My daughters' boyfriends each asked for thirds! The recipes are easy to follow with flexible instructions and ingredients that are easy to find in the cupboard or at the local market. The pot pies all have very different flavors and we look forward to interchanging the various fillings and crusts to make different combinations. These pies are perfect for cold winter evenings (even in San Diego). They warm the heart of the cook and the tummy of the diner!

This is the by far the best cookbook I own, and I own at least 100 of them. I would give this more than five stars if that were possible. Every recipe I have made has been incredible and is fine to make for my husband and myself or fancy enough for guests. I love this cookbook and can't recommend it enough!

This comfy cookbook is dedicated to that wonderful staple food, potpies! The first chapter is a handy set of instructions on setting up a pantry. After that, the fun really begins! There are four potpie chapters: chicken and turkey, meat (beef, pork and lamb), seafood, and vegetable. Potpies of every description are includes: all-American, Cajun, Mediterranean, SouthWest, and much more. What is nice, is that the recipes for crusts and contents are spelled out, which means that you can mix and match, or whatever.

This is a great book, one that I am glad that we bought. So far, we?ve made Ryan?s Pie (p. 46), Beef Filets with Wild Mushroom and Maytag Blue Cheese Topping (p. 77), and (my personal favorite) Mom?s Beef Stew Topped with Sage Parmesan Biscuits (p.88). This is a great book, full of easy-to-make recipes; I highly recommend it!

I started salivating from the promos I read about this book. Than, it was soldout and I had to wait for a copy. So, I expected maybe the big letdown when it arrived.

Happily, though, I'm able to report that this cookbook lived up to and beyond what I purchased it for: I'm a real under cover comfort food lover now and then.

My wife claimed not to be; until I served several recipes out of this book: The Sea Bass Stew and the Turkey with Stir Fry Veggies are just two of the many I've made already.

The best thing about this unique approach is not just the many varieties of ingredients for fillings and toppers that she provdies, but that no matter how good the dish is the first time, there is usually enough for several settings thereafter.

I'm going to wear this one out using it, and you will too. They're simple to moderate in their compexity.

Diane Phillips has written a masterpiece. I have tried 5 or 6 of the dishes so far...and all have been wonderful. I'm a single working mom who is usually in a time crunch. These pot pies are quick and easy. Diane makes the recipes easy to follow and the ingredients are easy to find. Anyone who can not make these dishes turn out must not spend too much time in the kitchen, and better stick to frozen food! I can't wait to get my hands on Diane's next book.

I use this book often. You can mix and match the toppings (foccacia, phyllo, potatoes, pastry, rice, etc). Her fillings are delicious, if caloric. My young children especially love her recipes, which are traditional but innovative. For example, her scalloped potato and ham casserole is made with a quiche-like filling and topped with lots of gooey swiss cheese. Who wouldn't prefer that over the standard recipe? The beef stew with sage biscuits is a family favorite which I prepare in the crock pot. Each recipe I've tried has been successful. A great addition to your cookbook collection.

I enjoyed the flexible approach the author took to putting together her pot pies; she used many alternative coverings like whipped potatoes, biscuit variations, pie crust, phyllo and few more uncommon options. They really spice up the choices, allowing you to cook from the book several days in a row without feeling like repeats. I was also pleased by the notes the author provided for some recipes allowing for the main ingredients to be cooked in a crock pot and then transferred to the oven to finish off the topping at the end. For long, busy days that's a great convenience!

I look forward to cooking my way through this book and experimenting with the flavor combinations and presentations.

This book gives you more than the basic chicken pot pie, although that recipe is great. I didn't know that there were so many tasty ways to fix a pot pie; I love the variety in this book.
