Terra cotta is the best containers for cooking juicy, tender foods. This terra cotta roaster is no exception. The garlic comes out soft, moist and not over done, as long as the instructions are followed. The secret is soaking the lid in water...DO NOT overlook this step.
This is the only kind of roaster I will buy and I highly recommend it for connisseurs (sp?) of foods well done!

I love roasted garlic. Lately I've taken to making garlic butter with 3 heads of roasted garlic and chopped up fresh basil.

The only "complaint" that I have with this roaster is the size. Two heads of garlic is a tight squeeze with wasted space. A third head, broken up, can sometimes be made to fit.

I would gladly trade mine for the larger version. But, if you're not overly addicted to lots of garlic all at once, this is a great product.

I had just received this Garlic roaster and couldn't wait to try it. I followed the directions and instead of putting in in the microwave for 5-6 minutes, I put it in for only 4 minutes. The smoke started pouring out of the microwave vent and the entire head of garlic was coal black and the roaster was ruined. A friend told me to try only 1 1/2 minutes and, although the roaster now has a burnt smell, I tried it for that time only. The garlic turned out soft and usable, except I will now have to replace the roaster with a new one. Whoever wrote the directions couldn't have been further off with the timing. Just be careful! I would probably cut down the oven time to 30 minutes instead of the recommended time, also.

This is a great way to roast garlic, but first you need to season the two parts like any other terra cotta cooking vessel or risk it cracking. I'll provide instructions for that below. This excels in roasting garlic to the consistency of thick butter. Even the dome-shaped lid aids in that because it captures moisture and 'rains' it down on the cloves to tenderize them. There is a small vent in the top that relieves pressure and allows some moisture to escape.

The bottom where you place the garlic is heavily glazed, so - for better or worse - this roaster will not accumulate the aromas and flavors of the garlic like an unglazed roaster. On the other hand, it makes this easier to clean.

You can fit up to four smaller bulbs in this five inch roaster, which is more than enough capacity to serve freshly roasted garlic for a meal for two to four people. I'll include cooking instructions in a comment so this review does not scroll on for pages.

Seasoning the roaster: Out of the box soak both the bottom and lid in water for two hours. The bottom is mostly glazed, so is not as critical as the top. Lightly coat the unglazed parts with olive oil. A little goes a long way, so do not over do it. Wipe off the excess and then place it in a cold oven and bring the temperature to 300 degrees. Allow it to 'bake' for at least thirty minutes, turn off the oven and allow the roaster to naturally cool. It will be seasoned at that point. Although this is supposed to be microwave safe I recommend using it in an oven for best results. I never could get a decent roasted garlic from a microwave.

Please see my comment below for instructions on roasting garlic. One final note on caring for this: although the bottom part is partially (and heavily) glazed, when you do wash this only rinse it in clear water and do not use detergent. The unglazed areas will absorb the fragrances of the detergent and flavor your garlic in unwanted ways.

Wrapping cloves in Tin Foil with some olive oil works much better, and you don't have to soak the foil first or worry about the temperature cracking the foil if it gets to hot. Makes a nice storage container for garlic though.

A great little item to have in the kitchen. If you ever roast garlic, this is the best thing going. Big enough for the largest elephant garlic, nice design, easy clean-up and pretty enough to set on the table or buffet. I own one and have given two as gifts.
