This is a beautiful book to look at, but not for beginners and not for me at all. Perhaps those far more advanced than I am will take to this book. For one, it uses NO pectin. To thicken the preserves, it uses chopped green apples for pectin, needing to be strained out and more work. I'm not into that thank you very much. I don't like that some recipes she doesn't even bother giving the processing times! Sometimes it does, other times it doesn't. Is one to assume it is the usual 10 mins as most jams and jellies? Then why not simply show that for assurance ALL the time? Guesswork is not good for preserving safely. Had there been a 'sneak peek' option I would have known better to NOT buy this. I bought this book elsewhere for under $8, for that I am grateful. It is certainly not worth the $20+ it is being sold for here. I am sorry I even paid what I did. Just know what you're getting with this.

Very well done book. I can't wait until I have all the kitchen tools to make my own jellies, jams and mustards.

It's a coffee table book. If you're wanting to really learn to can and/or preserve this is not the book.
