3.0 out of 5 stars Good for the money
Good for the money, I would not complain (as others have) that you can stop the motor by pushing down on the knife too hard. If it didn't stop, you would be just grinding away too much of the blade, probably at a bad angle. Once complaint I do have is that the built-in guides cause the blade to sharpen with too blunt an angle. On a hand stone, you would hold the blade up...

I read all the reviews before buying and just had to write my review (my first ever of any product). I have worked in kitchens in the past and prepare meals regularly. I am a cajun cook and we chop crazy amounts of onions, celery, garlic, bell peppers and everything else from the garden. I also have a catfish pond, and I need a very sharp filet knife. So needless to say I have a drawer full of old filet and chef knives of varing quality and dullness. I have tried so many sharpening techniques and nothing I tried could restore the original sharpness without spending a ton of time an energy.
Well let me tell you, all the positive reviews are correct, this is a marvelous little gem and its the best $24 dollars I ever spent. Less than the new knife I was going to buy. I have knives of every metal imaginable and this little baby put an edge on them that is crazy sharp. I had to warn the wife about how sharp the knives were. Before if a burgular would come at me with one of my knives I would have died laughing, now I have to worry how they are stored in the drawer so not to accidently cut myself rummaging around in there.
Trust me, if you need your knives sharper than this baby gives you then you just are plain crazy. I believe I saw my onions cowering in the fridge! I had to cook a big seafood gumbo with extra onions and celery just to celebrate my new sharp knives.
This baby gets The Cajun seal of approval!!!
Have fun and be safe with your like new sharpness!
***Update***
It has now been almost three months since I first sharpened my knives and wrote this review. I use my knives everyday and they have held their edge ever since, this sharpener is just collecting dust now because I have had no need to resharpen them. I of course use a good piece of steel to keep a razor edge but otherwise I don't foresee having to resharpen for awhile yet.
***Update 2***
Its has been over 6 months now. My knives are sharp as razors with only two sharpening times. And they get heavy use, cleaning huge catfish from my pond and also chicken and all sorts of heavy kitchen use. Coupled with a nice piece of steel this sharpener is so good I just can't live without it. With so much usuage out of my knives and only having to sharpen 2 times in the last 6 months I would have to say it is the best 24$ I have ever spent!
***Update 3***
It has now been 2 years since purchasing this excellent knife sharpener. It is funny, I took this sharpener down from the top shelf to sharpen my 12" chef knife before cutting up a ton of meat to make sausage and I had to wipe all the dust off of it before using it, that is how infrequent I have to sharpen my knifes, and I use my knives for heavy duty use! Love this sharpener! Get yourself a decent piece of steel, a good chopping board and you got it made.
***Update 4*** It now has been 4 years! It is funny 2 years ago my wife bought me this exact sharpener by accident. I had it on my Amazon wish list...for review purposes and she didn't even realize I had one, that is how infrequently I have to sharpen my chef knives. I kept a hold of it to see how long my original one would last, well I am tired of waiting, I am bringing the unopened 2 year old sharpener to work today to sell it.
And I do a lot of cutting and I just took it down from the cabinet and had to dust if off again to see how well it worked before letting go with the unopened one. Knives didn't need it just wanted to 'top em off', all like new again.
*Note to commenter, all my knives in use are in their original cases, or original sleeve.
Next year will be my 5 year review. The person I am selling the unopened sharpener to is a hard core hunter and trapper. We will see how it handles. Stay tuned.

My son gave me a high quality chef's knife a year ago. I kept the knife sharp using a sharpening steel. I had never used a high quality knife before and the difference was remarkable. It was a real improvement over all the knives I had ever used. I really enjoyed using it.

Then, after about 4 months, the knife suddenly got dull. No matter what I did I could not get it back to the way it was when it was new! I used 6 different sharpening gadgets including an oiled wet-stone, a powered work-shop knife sharpener, two traditional kitchen knife sharpeners and even a special diamond coated gadget from our local gourmet shop. They all got the knife sharp, as sharp as all my other knives, but it was no longer dramatically better than the cheap knives.

Based on the 5 star reviews, I decided to give the Presto 08800 Pro EverSharp Electric Knife Sharpener a try. After carefully following the instructions, the knife was restored to it's like-new scary sharpness on the first sharpening. It has stayed sharp for 2 weeks with much use.
We have since sharpened several other knives with similar high quality results.

Don't do what I did, instead buy this sharpener first! It is a great tool!

My advice is to carefully read the instructions and follow them. It worked for me.

5.0 out of 5 stars A wonderful product!, December 25, 2004
This review is from: Presto Pro EverSharp Electric Knife Sharpener (Kitchen)
One night my husband spent three hours sharpening our Chicago Cutlery set by hand and afterwards said he wanted to find an electric sharpner. We started pricing them, but from what we saw they ranged from $80-$135. I went online and found the EverSharp and after reading the reviews purchased it and set it aside for XMas. I just have to say that it has lived up to expectations and then some. It's amazing how quick and effecient this sharpner is! In less than five minutes my husband had our Cutlery knives sharpened even better than they were when we originally got them. He then sharpened his mother's knives that have never had a good sharpening.
I knew I had bought him a good product when after each sharpening he looked at the knife and whispered: "Oh my God!"
Great results at a great price!

I am a culinary student and sharp knives are not only convenient, they are essential to pass classes! Honestly, I am not the best with my whetstone, so I looked for an easier way to sharpen my equipment. I've always been taught that an electric sharpener is the worst thing you could ever use on quality cutlery, but the reviews for this thing were good. I took it to my mother's house to "experiment" with some of her knives that were just about ruined. I was shocked when they went from no edge at all to passable the first time through the machine. I was VERY shocked when they came out VERY sharp the second time through! After sharpening every knife in her house, I took it home and (gulp) tried it on mine... Fantastic!

This gadget has saved me quite a bit of money because I used to get my equipment sharpened by a professional when they really needed it. For about the same cost as one pro-sharpening you can have this device. I have used it on my school equipment as well as my personal collection of Wusthof classics and not had a problem.

However, I do prefer to steel them by hand after sharpening. If you use this device to hone a blade, it can leave a slight burr. I know some people prefer that, but I do not. Also, you need a steady hand to get the most out of the sharpener. You MUST read all directions and follow them to the letter. While not at all difficult, you cannot simply, "Stick in a knife, pull it out sharp."

I have never written a review for a product, but this one has inspired me. Get one!

5.0 out of 5 stars Great Sharpening Device, December 4, 2003
This review is from: Presto Pro EverSharp Electric Knife Sharpener (Kitchen)
I look at the gold box every day, and saw this sharpener on sale. I already own it...purchased it locally, not from Amazon, and it cost me more than the gold box price. It does an amazing job on sharpening knives. I have an older set of Chicago cutlery, and it sharpens them razor sharp whenever I use it.....which my wife says it not often enough!! I sharpened our knives the day before Thanksgiving, and the bird practically carved itself. It's also very easy to use, and has a foolproof design. I recommend it highly.

On a hand stone, you would hold the blade up less than 15 degrees. It is, at a minimum, more than twice that on this machine. But, for the price, and because so many new knives have ultra-hard stainless blades, the machine is fine. Those hard blades make hand-sharpening a terrible chore.

5.0 out of 5 stars Simply amazing, January 12, 2006
This review is from: Presto Pro EverSharp Electric Knife Sharpener (Kitchen)
This sharpener is astounding. My knives are now all frighteningly sharp - sharper than they have ever been. Following the instructions exactly, I was able to return a perfect edge to my Wusthof Classics within one or two runs through the procedure (sandwich, paring, chefs, and large and small Santoku) - all within minutes of opening the box. I hadn't realized just how dull they had become until I see what they can do now. The chef's knife will literally slice a ripe tomato by resting the knife on top of it with no added pressure.

The hum of the sharpener is quiet, though my 2-year-old was a tad concerned by the sound of the actual sharpening. Despite the built-in shaving collector, I did notice some fine metal shavings on the counter behind the sharpener once I was done. Not a problem, just something to be aware of to wipe up afterwards.

This is a fool-proof product that absolutely does it's job as advertised.

I just bought this sharpener. Works exactly as described.
Did all my knives in no time. I even tried some serrated knives that got dull over the years...it worked. Here's how. Many serrated knives have one side that is flatter. Gently sharpen this side. I then take a 'steel' and slowly do the other side two or 3 times. Remember there many types of serrated knives.
This technique might not work on all. Its worth a try if the knife is still 'useable'.

This knife sharpener works really well with my 8-inch kitchen knife that I use for cutting meat, but it's difficult to sharpen my shorter paring knife. The slots don't provide enough room to fully sharpen a short blade. My paring knife's blade is about 4 inches long, but only 3 inches get sharpened.

5.0 out of 5 stars It works., January 11, 2007

This review is from: Presto Pro EverSharp Electric Knife Sharpener (Kitchen)
This sharpener works wonderfully well, shaping an excellent edge on my new knives, as well as resurrecting some of my cheaper, older knives at the back of the drawer.

The preset cutting edge angle seems to be between the shallow european angle (which produces a longer-lasting edge) and the severe asian (which produce a sharper edge that blunts more quickly) - a good compromise, though not an adjustable one.

I bought this in conjunction with a nice set of santoku knives, which were a good quality steel but ship blunted. The sharpener, which mounts on the counter with suction pads, effortlessly shaped and honed the blades.

The process of sharpening the knife will take about one minute per knife. A total of twelve slow draws, hilt-to-tip, are required (3 for each side to sharpen, and then repeated for honing).

Some care needs to be taken: you need to be sure to rest the blade on the outer side of the blade guide for a consistent blade angle, and only press the blade gently downward - for large knives, you can let gravity do all the work. If you press too hard, the grinding stone will stop spinning: this may be an unintentional feature, but it's an immediate indicator that you're "doing it wrong". Having said that, I bought one for my mother as well, and she "mastered the art" on the first blade.

Basically, I don't see why you would pay more for a sharpener. If you want a more specialized edge on your knife, then you're probably the type of person to hire somebody to do it for you.
