This book is superb - whether you're a professional or just love to cook. I took a one-night class and this book was the reference the chef referred to again and again. It has everything you'll need to grow your cooking skills - can't recommend it enough.

A side benefit - your math skills will improve because the recipies are designed for large groups...

Hello Amazonians,

Would I recommend this, absouletly not. I wanted to learn how to cook professionally and with sophistication but this is a mess of different recipes and techniques. I need a PhD just to understand the introduction. Horrible decision, the only good thing is I have one Christmas gift crossed off the list.

This book is superb - whether you're a professional or just love to cook. I took a one-night class and this book was the reference the chef referred to again and again. It has everything you'll need to grow your cooking skills - can't recommend it enough.

A side benefit - your math skills will improve because the recipies are designed for large groups. Your division skills will grow greatly!

This book is teaching me all the academic properties of a culinary art education with out being in an actual class room. It helps because I'm in the Army and I can't study in an actual class room yet.

I bought this book for a college course, but it has so much information about every aspect of the kitchen...I will keep it for myself to use at home when the class is over! Could've saved money buying an older addition, but am pleased that I got it 10.00 cheaper than the college bookstore.

I've owned this book for almost a year and have been very pleased with it. The instructions are easy to follow and I've been able to increase my skills by reading then doing. I really like how, for most techniques, there's a "why" you do something one way vs. another. His Professional Baking book is also superb. Don't be turned off by what you may think is too hard or complicated. Sure, you might fail the first time but so do most people riding a bike. With a little bit of practice you can make great sausage, yummy cookies (blue ribbon at the county fair!), incredible soups and main dishes, and awsome desserts. Take a chance!

I'm an aspiring chef. I really found this book to be useful. All the recipes are amazing and the price is worth it. This book has taught me to cook healthier but still very tasteful. I used this book in most of my cooking classes, so its very handy. It even came with a cd-rom. All around, its a very good book for everyday use in the kitchen. Its a MUST HAVE! Thank you.

This book is awesome. It tells you anything you want or need to know. I went to a professional 1 year culinary school and we used this book many times. It is great if you just want to learn a little bit about cooking or if you are getting your career track under way. I bought this book and keep it around it has tons of different classic types of recipes (that is to say nothing made from a can). Some of the skills you will learn are phrases like Brunios, fine brunois, small dice, Mise an Place, Mother Sauces, Ect. Great book definitely worth the time to read.
